Homemade Broccoli Casserole

Delicious and creamy broccoli casserole that is the perfect side dish for any holiday meal.

Ingredients
  

  • 1 bunch fresh broccoli
  • 2 eggs
  • 1 can cream of mushroom soup
  • 1 small onion
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 2 sleeves Ritz crackers
  • 1/2 cup butter (1 stick), melted

Instructions
 

  • Cook broccoli on medium heat until tender, about 20 minutes.
  • While broccoli is cooking, crush up the crackers. I usually crush up of two sleeves of crackers. I put them in a freezer bag and crush them up with a rolling pin to make it easier.
  • Once broccoli is done cooking, mix broccoli with 1 can cream of mushroom soup, 2 eggs, 1 chopped onion, 1/2 cup of shredded cheddar cheese, and 1/4 cup of mayonnaise. 
  • Then place mixture in casserole dish and arrange crushed crackers on top.
  • Next, pour the melted stick of butter all over the crushed crackers.
  • Bake at 375 for about 30 minutes or until the cracker crumbs start to brown.
  • Let cool for 10 minutes and then enjoy!
