Preheat oven to 350 degrees and spray 2 loaf pans with cooking spray.
In a large mixing bowl, mix together the 2 cups flour, 1 tsp baking soda, 2 tsp baking powder, 1 1/2 cups sugar, and 2 tsp cinnamon.
In a medium mixing bowl, mix together all the wet ingredients- 15 oz canned pumpkin, 3 eggs, 1 cup vegetable oil, 2 tsp vanilla.
Then, pour the wet ingredients over the dry ingredients and mix throughly until smooth.
Divide the mixture in between the two greased loaf pans.
To make the cinnamon sugar topping, mix together the cinnamon and sugar in a small bowl.
Sprinkle the mixture on top of the batter. Using a knife, gently swirl the mixture on top.
Place in preheated oven for about 55-65 minutes. Or until an inserted toothpick comes out clean.
Let cool for 15 minutes and then enjoy!
