Preheat oven to 350 degrees.
Mix together the quick oats, bananas, and peanut butter into the bowl of a stand mixer. Start with 1 tablespoon of peanut butter and then add another if the mixture seems too dry.
Add in the chocolate chips, if using, and mix well.
Scoop cookie dough out into balls and place on baking sheet. These cookies do not spread when baking so you don't need to place them with much room apart.
Bake for 15 minutes and then let cool on a wire rack before enjoying!
Store in a freezer bag or airtight container for up to two days after.
