Preheat your oven to 325 degrees. Line a baking sheet with parchment paper.
Then, stir together the sugar and the orange zest in a large mixing bowl. Be sure to use the back of a spoon to press together and blend the sugar and orange zest. This helps to release the oils from the orange zest as well.
Whisk in the egg white, water, and salt.
Then, add in your almonds and toss to coat evenly.
Spread almonds out on prepared baking sheet and bake for 25 minutes. Or until the sugar mixture is looking dry and is lighter in color.
Cool on a wire rack and then break into bite sized pieces. Store leftovers in an airtight container at room temperature for one week.
