Patriotic Sugar Cookie Bars

Ingredients
  

For The Cookie Base:

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/2 tsp baking powder
  • 1 cup all purpose flour
  • 3 tbsp cornstarch
  • 1/4 tsp salt

For The Cookie Frosting:

  • 4 tbsp butterĀ  softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 3 tbsp heavy cream
  • red food coloring optional
  • patriotic sprinkles

Instructions
 

  • Preheat your oven to 350 degrees and spray a 8x8 baking pan with some nonstick cooking spray.
  • In the bowl of a stand mixer, cream together the butter, granulated sugar, and brown sugar together.
  • Add in the egg and vanilla and almond extracts. Mix well to combine.
  • In a large bowl, sift together the flour, baking powder, cornstarch, salt.
  • Add flour mixture to wet mixture on low speed. Beat until just combined.
  • Spread cookie batter into prepared pan and bake for 20-25 minutes.
  • Let cookie base cool completely before adding frosting.

For the frosting:

  • In the bowl of stand mixer, combine the softened butter and powdered sugar together.
  • Add in heavy cream and vanilla and mix until light and fluffy.
  • Add some red food coloring into the frosting if adding.
  • Frost the cooled cookie bars and top with patriotic sprinkles if desired!
