Publix Feta Pasta Salad Recipe

Servings 8 people

Ingredients
  

For The Pasta Salad:

  • 8 oz rotini pasta cooked and drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumbers diced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion finely diced
  • 1/2 cup Kalamata olives pitted and halved
  • 3/4 cup feta cheese
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped

For The Dressing:

  • 1/4 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp garlic powder or minced clove of garlic
  • salt and pepper to taste

Instructions
 

  • First, just cook and drain your pasta according to the package's directions. When done cooking, give it a rinse under cold water to stop the cooking process.
  • While your pasta is cooking, you can chop up all the veggies and set them aside.
  • In a large bowl, mix together the cooled pasta and all the chopped veggies.
  • Then, make the dressing. In a smaller bowl, whisk together extra virgin olive oil and red wine vinegar to create a smooth dressing base.
  • Then, add in the oregano, garlic powder (or minced garlic), and season with salt and pepper to your liking.
  • Drizzle the finished dressing over the pasta and make sure all the veggies are well coated with the dressing.
  • Then, gently mix in the feta cheese, and fresh basil and parsley. Cover and chill in the fridge at least 30 minutes before serving.
  • When ready to serve, you can also squeeze some fresh lemon juice on top if desired as well!
