Slow Cooker BBQ Chicken

Servings 15 servings

Ingredients
  

  • 8 boneless, skinless chicken breasts
  • 2 tbsp chili powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 large onion thinly sliced
  • 8-10 garlic gloves
  • 1 40 oz bottle of barbecue sauce

Instructions
 

  • Start by placing all of the chicken breasts inside your crockpot. Sprinkle the chili powder, kosher salt, and black pepper evenly over the chicken.
    Add the sliced onion and garlic cloves.
  • Pour 1 cup of barbecue sauce over the chicken. Be sure to save the rest of the BBQ sauce for later.
    Then pour 1 cup of water into the slow cooker.
    Place the lid on the crockpot and cook on high for 4 hours, stirring about halfway through cooking.
  • Once the chicken is finished cooking, carefully remove it from the slow cooker and let it cool for a few minutes.
    Then shred the chicken using two forks or your preferred method.
  • Pour the cooking liquid from the slow cooker through a fine-mesh sieve placed over a bowl. Be sure to reserve 1 cup of the cooking liquid, along with the cooked onions and garlic.
  • Return the shredded chicken to the slow cooker.
    Pour the remaining barbecue sauce over the chicken, then add the reserved onions, garlic, and 1 cup of the cooking liquid.
    Stir everything together until well combined. Serve and enjoy!
