First, make the cinnamon dolce syrup. Combine the water and the sugars in a saucepan over medium heat, stirring continuously until all the sugar melts. Then add in your cinnamon and vanilla. Bring to a boil and let it simmer for 3-5 minutes, or until it reaches a syrupy consistency.
Remove from heat and store cinnamon dolce syrup in fridge until ready to use.
Now, make to make the caramel apple spice, combine apple cider, caramel sauce and cinnamon dolce sauce in a saucepan over medium heat. Combine well and continue to heat until mixture is heated all the way through, about 1-2 minutes.
Remove from heat and pour into glass. Top with whipped cream, a sprinkle of cinnamon, and some extra caramel sauce if desired. Enjoy!
