Southern Apple Cobbler

Ingredients
  

For The Apple Filling:

  • 7 7 medium apples combination of tart and sweet apples
  • 1/4 cup lemon juice
  • 1/2 cup brown sugar
  • 3 tbsp all purpose flour
  • 1 tsp ground cinnamon
  • 4 tbsp butter melted
  • 1/4 tsp kosher salt

For The Pie Crust Topping:

  • 2 1/2 cups all purpose flour
  • 1 tbsp sugar
  • 1 tsp kosher salt
  • 1 cup unsalted butter cold
  • 1/2 cup buttermilk
  • 1-2 tbsp cold water
  • 1 tbsp butter melted
  • 1/3 cup sugar
  • 1/4 tsp ground cinnamon

Instructions
 

For The Pie Crust Topping:

  • To make the crust, combine the flour, sugar and salt together in a large bowl or food processor.
  • Add cubed butter and then pulse again. Combine until all the butter is incorporated into the flour mixture. This mixture will be very flaky.
  • Place mixture into freezer for 15 minutes to completely chill the butter. Remove from the freezer and add in buttermilk.
  • Using a spoon and then your hands, combine until dough becomes a ball. If the mixture is too dry, you can add 1-2 tablespoons of cold water here.
  • Divide dough into two and flatten into disks. Wrap in plastic wrap and store in the fridge until ready for later use. You can freeze one of the disks for future use as well since we only need one here.

For The Apple Filling:

  • First, peel and slice the fresh apples and place them in a large bowl.
  • Then, pour the lemon juice on top of the apples.
  • Add the remaining ingredients (brown sugar, flour, ground cinnamon, melted butter, and salt) to the sliced apples.
  • Stir together to coat apple slices entirely. Transfer apple slices into greased baking dish. 
  • Using the pie crust, roll it out until you get 1/4 inch thickness. Then, using a cookie cuter, or just slices, arrange pie crust on top of apples.
  • Then, melt 1 tablespoon of butter and use a pastry brush to brush all the pie crust pieces.
  • Combine the sugar and ground cinnamon to create a cinnamon sugar topping. Sprinkle evenly over the pie crust.
  • Place in a preheated oven at 350 degrees for 35-40 minutes. Cobbler is ready when the pie crust on top becomes a nice golden brown color. 
  • Let cobbler cool to room temperature. Serve with a scoop of vanilla ice cream if desired!
