Tuesday Treats is BACK… with a plot twist 🍪✨ I’m going gluten-free because my endometriosis has been kicking my butt lately, and y’all, this was my first test run. These gluten-free chocolate peppermint cookies were SO good I genuinely couldn’t tell the difference 😳 Baking is my happy place, so we’re not quitting… just switching things up a bit. Endometriosis is not “just bad period cramps.” It

Endometriosis is not “just bad period cramps.”
It affects me every single day in ways most people never see. It can spread throughout the body, impacting organs like the bowels, kidneys, liver, and more.

To help shed light on what I (and so many other women) live with, I created a “12 Days of Endometriosis”- because for us, the symptoms don’t magically stop after December 25th. And on really lucky days, I experience all 12 at once (sometimes even more) 😂

I won’t even dive into every symptom, but I will say this: I’m exhausted from being dismissed by doctors, from the lack of adequate care, and from being told there’s still no cure for the pain. Women’s healthcare deserves better, period.

If sharing this brings even a little awareness to this space, then it’s worth it. And if you’re living with this cruel disease too, please know you are not alone ♥️

I always love Starbucks festive drinks, but I don’t love all the added sugars and everything they put into them. So I love to try to make a “healthier” version at home. That way you can still enjoy these festive drinks without all the unnecessary additions! I made this Starbucks Copycat Gingerbread Latte a few years ago, and it’s always still a hit! Cranberry Protein Muffins Recipe
INGREDIENTS
1 1/2 cups whole wheat flour or all-purpose flour
1 scoop protein powder I used Devotion Nutrition Angel Food Cake Protein Powder, can use vanilla or unflavored as well
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 cup fresh cranberries
2 large eggs
1/2 cup vanilla Greek yogurt can use plain as well
1/2 cup unsweetened vanilla almond milk or whatever milk you prefer
1/4 cup maple syrup can use honey as well
2 tbsp olive oil
1 tsp vanilla extract
Orange zest, optional
INSTRUCTIONS
First, preheat your oven to 350 degrees. Then, line a muffin tin with cupcake liners.
Then, mix together all the dry ingredients first. In a large mixing bowl, sift together the whole wheat flour, baking soda, baking powder, salt, and cinnamon until well combined.
Add in the protein powder.
Set aside the dry ingredients and prepare the wet ingredients in a separate bowl.
Start by whisking the two eggs together slightly. Then, add in the Greek yogurt, almond milk, honey, olive oil, and vanilla extract.
Stir until everything is well incorporated. Now, combine the wet ingredients into the dry ingredients.
Using a spatula, mix together until everything is combined, but do not over mix. Gently fold in the cranberries and add in the orange zest, if using.
Spoon batter into prepared muffin tin. Bake in preheated oven for 18-22 minutes.
Cool in muffin tin for about 5 minutes before transferring muffins onto wire racks to cool completely to room temperature. Enjoy!
