It’s officially been ONE FULL YEAR since my health It’s officially been ONE FULL YEAR since my health started spiraling. 💔

A year ago today, I was at work when my heart rate suddenly spiked so high that I became extremely dizzy and shaky and genuinely thought I was going to pass out. I went to the ER afterward just to be safe, and of course… everything looked “normal.” My EKG was normal. They could see that my heart rate had spiked, but they couldn’t tell me why.

Little did I know that one scary episode would turn into a daily battle with unexplained symptoms. Fast forward one year and I’m dealing with even worse symptoms, including frequent heart rate spikes, dizziness, shakiness/tremors, fatigue, and so much more. And the hardest part? I STILL DON’T HAVE ANSWERS.

I can’t even work anymore. I’ve spent months waiting for appointments, getting test after test, waiting for results, and hoping that this will finally be the thing that explains what’s happening… only to end up with more questions.

And honestly? I feel crazy sometimes. Not because I think this is all in my head, but because it’s incredibly hard to keep telling people how badly you feel when test after test doesn’t give you an answer. 😭

It’s been a really rough week emotionally, and I’m having a hard time dealing with all of this. I feel like I’m constantly taking one step forward and two steps back. How long am I going to have to wait before I finally have answers? How much longer until I can start feeling like myself and actually live my life again?

I’m so tired of waiting. I’m tired of being passed from appointment to appointment. I’m tired of having no real help in the meantime. And I’m tired of feeling like I have to fight so hard just to be heard. 💔 I’m trying so hard to let go, trust God, and believe that there’s a reason for all of this… but y’all, IS IT HARD. 😢

I’m praying that after this past year, I’m finally getting closer to some answers. Until then, I’m just taking it one day at a time. Y’all, I’m asking for some extra prayers today. ❤️ Y’all, I’m asking for some extra prayers today. ❤️ Today is finally MRI day. They’re checking my brain and my cervical and lumbar spine, and I’m praying this is one step closer to finally getting some answers about what’s been going on with me.

At this point, they’re looking into possibilities like Chiari malformation, MS, or something else entirely. And honestly… I have no idea what these MRIs are going to show.

I think one of the scariest parts is the possibility that they could come back “normal” and I’ll STILL have no answers. Because when you’ve been dealing with symptoms for so long, you almost start questioning yourself and wondering, “Am I actually crazy?” 😜

I obviously don’t want them to find anything serious, but at the same time, I NEED them to find something that can explain why I’ve been feeling the way I have. If you’ve ever been stuck in that horrible limbo of “I know something is wrong, but I don’t know what”, you know exactly what I mean.

So today I’m praying for clear answers, good news, and hopefully a diagnosis and treatment plan that can finally help me move forward. 🙏🏼 And I’m REALLY hoping I don’t have to wait forever for those MRI results either because the waiting is absolutely brutal.

It’s been such a stressful and exhausting journey, and I’m just ready to get this part OVER WITH. 😭

How can my short-term disability claim be denied while saying I’m still capable of doing a job that requires me to use extremely sharp dental instruments underneath people’s gums every single day?

If I were your dental hygienist, would you feel comfortable trusting me to clean YOUR teeth while my hands are shaking like this? Because I don’t.

I’m not trying to get out of working. I’m trying to protect my patients and myself while I figure out what is happening to my body.

I’ve spent over 10 years working as a dental hygienist, and right now I physically struggle to hold my instruments and perform my job safely because of these tremors. I still don’t have answers or a diagnosis, and I’ve been waiting weeks for a brain MRI to hopefully help determine what’s going on.

But in the meantime, I’m expected to just go to work and continue using sharp instruments in people’s mouths like nothing is wrong?

This is so incredibly frustrating. I want to work. I WANT to be able to work. But I also want to be able to do my job safely and responsibly.

This is what happens when the healthcare system and disability insurance system fail people who are genuinely struggling to work.

The BEST Homemade Raspberry Jelly

Ever since I was little I have always been drawn to anything raspberry flavored and jelly is no exception! Although, after you have some true, homemade red raspberry jelly, you just can’t buy a jar from the store anymore. It’s just no where near the quality of my Meme’s Red Raspberry Jelly! We have been making it and canning it together for years and it is so much fun and it will definitely always be a special memory I will always cherish!

This jelly goes perfectly with some fresh, homemade buttermilk biscuits too!

I figured now would be a perfect time to share it with all of you since we are all stuck inside and looking for things to do. So if you’re up for the challenge of making the BEST homemade jelly (and canning it!) then this post is for you!

I love having a lot of homemade canned goods in my pantry because it’s always nice to have during times like this when you don’t want to visit the grocery store as frequently. One of my favorite things is being able to stock up my freezer too, which you can read all about My Top 3 Freezer Meals if you’re interested.

We can fresh green beans together every summer as well and there’s nothing like breaking open a can a delicious green beans straight from the garden during the cold winter months when you can’t get fresh produce as easily.

I am definitely no canning expert, I rely on my Meme a lot when we make it. But, I have tried to take some notes throughout the years of how she does it so I can remember it myself!

I feel like canning is definitely a lost form and many people don’t teach their children or grandchildren about it anymore. Or maybe the kids just don’t care to learn about it, however, not me! I want to be able to do this for years and years to come!

Ingredients Needed:

  • 4 cups fresh red raspberry juice
  • 1 box of Sure Jell Pectin
  • 5 1/2 cups of sugar
  • Canning jars and lids

Directions:

First, bring the juice and pectin to a rolling boil. Continue to boil it once it reaches rolling status for just one minute after.

Add sugar and bring to another rolling boil. Continue to let it boil for another minute.

Now it’s time to add the jelly to the canning jars. You only want to fill the jars up to the first ring of the seal.

And make sure the jar is completely clean around the seal before screwing on the lids.

Here you can see we are filling up all the canning jars with the jelly!

Once your jars are full of jelly, then add them to a big pot of boiling water using a jar holder. Cover and let boil for five minutes.

Here is the jar holder we used to place the jars into the pot of boiling water.

After they have boiled for five minutes, remove them from the pot and set aside. It will take them a few minutes, but you will soon hear a glorifying “pop” which indicates that the can is sealed!

It’s always so much fun to sit and listen for that sound. We usually break for lunch while waiting for it so it’s so nice to hear them all popping, letting us know that the best homemade raspberry jelly is finally sealed and ready to go!

Tips and Tricks:

  • You also want to place the lids of the canning jars in a saucepan full of water and bring them to a simmer before using. Do not boil them- but you want to keep them hot until you are ready to use them.
  • Lay a towel down on the surfaces you will be working on. Because if you accidentally spill some, it will be easier to clean up because this stuff is pretty sticky!

      Lol yes I do! These pictures were actually taken a year ago when we canned them then and I still have four jars left! We were going to do another run last month but then the whole coronavirus happened and we didn’t get a chance to get altogether. Hopefully it will end soon and then we can make some more!

But, we were about to get altogether and make another run of jelly this year when corona happened and then we haven’t been able to get together again yet to do it. I hope this passes soon so we can!

      Well we did multiple batches of these recipe, that is why there is so many jars pictured! One batch won’t make that many. I can’t remember exactly how many jars one batch makes, but it’s definitely not as much as I have pictured, so you should be fine!

      I didn’t include the recipe for biscuits on this post, I don’t really have my own recipe for biscuits. I usually use Joanna Gaines recipe for biscuits. I’ve never been too good at making biscuit unfortunately. They don’t look pretty, but they taste good lol but thank you so much! I appreciate it!

It’s officially been ONE FULL YEAR since my health It’s officially been ONE FULL YEAR since my health started spiraling. 💔

A year ago today, I was at work when my heart rate suddenly spiked so high that I became extremely dizzy and shaky and genuinely thought I was going to pass out. I went to the ER afterward just to be safe, and of course… everything looked “normal.” My EKG was normal. They could see that my heart rate had spiked, but they couldn’t tell me why.

Little did I know that one scary episode would turn into a daily battle with unexplained symptoms. Fast forward one year and I’m dealing with even worse symptoms, including frequent heart rate spikes, dizziness, shakiness/tremors, fatigue, and so much more. And the hardest part? I STILL DON’T HAVE ANSWERS.

I can’t even work anymore. I’ve spent months waiting for appointments, getting test after test, waiting for results, and hoping that this will finally be the thing that explains what’s happening… only to end up with more questions.

And honestly? I feel crazy sometimes. Not because I think this is all in my head, but because it’s incredibly hard to keep telling people how badly you feel when test after test doesn’t give you an answer. 😭

It’s been a really rough week emotionally, and I’m having a hard time dealing with all of this. I feel like I’m constantly taking one step forward and two steps back. How long am I going to have to wait before I finally have answers? How much longer until I can start feeling like myself and actually live my life again?

I’m so tired of waiting. I’m tired of being passed from appointment to appointment. I’m tired of having no real help in the meantime. And I’m tired of feeling like I have to fight so hard just to be heard. 💔 I’m trying so hard to let go, trust God, and believe that there’s a reason for all of this… but y’all, IS IT HARD. 😢

I’m praying that after this past year, I’m finally getting closer to some answers. Until then, I’m just taking it one day at a time. Y’all, I’m asking for some extra prayers today. ❤️ Y’all, I’m asking for some extra prayers today. ❤️ Today is finally MRI day. They’re checking my brain and my cervical and lumbar spine, and I’m praying this is one step closer to finally getting some answers about what’s been going on with me.

At this point, they’re looking into possibilities like Chiari malformation, MS, or something else entirely. And honestly… I have no idea what these MRIs are going to show.

I think one of the scariest parts is the possibility that they could come back “normal” and I’ll STILL have no answers. Because when you’ve been dealing with symptoms for so long, you almost start questioning yourself and wondering, “Am I actually crazy?” 😜

I obviously don’t want them to find anything serious, but at the same time, I NEED them to find something that can explain why I’ve been feeling the way I have. If you’ve ever been stuck in that horrible limbo of “I know something is wrong, but I don’t know what”, you know exactly what I mean.

So today I’m praying for clear answers, good news, and hopefully a diagnosis and treatment plan that can finally help me move forward. 🙏🏼 And I’m REALLY hoping I don’t have to wait forever for those MRI results either because the waiting is absolutely brutal.

It’s been such a stressful and exhausting journey, and I’m just ready to get this part OVER WITH. 😭

How can my short-term disability claim be denied while saying I’m still capable of doing a job that requires me to use extremely sharp dental instruments underneath people’s gums every single day?

If I were your dental hygienist, would you feel comfortable trusting me to clean YOUR teeth while my hands are shaking like this? Because I don’t.

I’m not trying to get out of working. I’m trying to protect my patients and myself while I figure out what is happening to my body.

I’ve spent over 10 years working as a dental hygienist, and right now I physically struggle to hold my instruments and perform my job safely because of these tremors. I still don’t have answers or a diagnosis, and I’ve been waiting weeks for a brain MRI to hopefully help determine what’s going on.

But in the meantime, I’m expected to just go to work and continue using sharp instruments in people’s mouths like nothing is wrong?

This is so incredibly frustrating. I want to work. I WANT to be able to work. But I also want to be able to do my job safely and responsibly.

This is what happens when the healthcare system and disability insurance system fail people who are genuinely struggling to work.

If you’ve ever dealt with a denied short-term disability claim, disability insurance, chronic illness, unexplained symptoms, tremors, or being told you’re “fine” when you know something is wrong, I’d love to hear your experience. ❤️

But honestly, I really do love baking. There’s just something about measuring ingredients, mixing everything together, and ending up with something delicious that makes all the chaos feel worth it. 🤎
