I officially made it through my first full week back to work after a month-long surgery leave, and whew… the post-op fatigue is NO joke.

Every evening has looked pretty much the same: clock out, soak my aching body in a scorching hot bath, grab my heating pad, put on my weighted eye mask, and immediately take a cat nap before I can even think about making dinner or doing anything around the house. 😴

I knew recovering from endometriosis excision surgery would take time, but I didn’t expect the exhaustion to hit this hard after returning to work. My body is definitely reminding me that healing isn’t always a straight line.

Right now, this little recovery routine is getting me through:
💛 Hot bath
💛 Heating pad on full blast
💛 Weighted eye mask (shoutout to @nodpodofficial) 
💛 Emergency evening nap

Thankfully, it’s finally the weekend, and I can focus on resting and recharging before doing it all over again next week.

Whenever I have a bad day at work, I remind myself that I need that paycheck so my cats can stay home all day, nap in peace, eat snacks, and live their best spoiled-cat lives. 😂

This first week back at work has been ROUGH, y’all. I miss being home with my fur babies more than anything. Honestly, I think my true calling in life is being a stay-at-home cat mom. 🐾

But unfortunately, someone has to pay for the treats, toys, fancy food, and all the other necessities required to maintain this luxury cat lifestyle. And that someone is me. 😅

The funniest part? I don’t even think little Miss Riley misses me. As long as the food bowl stays full and the treats keep coming, she’s perfectly content living her best life while I’m out here working my butt off. 🤣

Anyone else with a chronic illness immediately Goo Anyone else with a chronic illness immediately Google every possible side effect before starting a new medication? Because I swear if there’s a rare reaction listed, somehow I’m the lucky winner. 🤣

Being chronically ill means I’ve tried my fair share of medications over the years, and my body always seems to have a mind of its own. If a medicine is supposed to make people sleepy, I’ll be wide awake all night. If there’s a tiny chance of an adverse reaction, somehow I’m usually that tiny percentage. 😅

So starting a new medication is always a little nerve-wracking for me. Part of me is hopeful it’ll finally provide some relief, and the other part is preparing for whatever random side effect my body decides to throw my way.

Here’s hoping this one actually helps my symptoms without adding a whole new list of problems. 🤞😂

Honestly, staying home healing after surgery has taught me one thing… I never want to leave my house again 😂 Being cozy at home with my cats, resting, binge watching shows, and avoiding the outside world has been absolutely glorious. I truly understand the “stay at home cat mom” lifestyle now lol.

At this point, I have everything I need right here at home. Peace, comfy clothes, snacks, my pets, and zero social obligations 🤣 Meanwhile, every time I actually leave the house, I come back completely exhausted.

So the fact that I have to go back to work today after a month of recovery is honestly going to be SUCH a rough adjustment 😅 I’m not mentally prepared to rejoin society yet lol. Anyone else secretly love being home way too much?!

Honestly, I’ve been struggling with the thought of Honestly, I’ve been struggling with the thought of going back to work while still recovering from surgery. Between the physical healing and the emotional side of post-surgery recovery, I’ve been feeling pretty down lately. So this comedy date night ended up being exactly what I needed.

We bought tickets to see @johnbcrist months ago, long before I had any idea I’d be spending a month on surgery leave. Turns out the timing couldn’t have been more perfect. This was our third time seeing him live, and he absolutely delivered. I laughed so hard that for a couple of hours, I completely forgot about returning to work, ongoing recovery, and all the stress waiting for me next week. 🤣

Before the show, we had dinner at @redgingerasianbistro and finished the night with dessert at @timesbarandcoffee which made the whole evening even better. Good food, lots of laughs, and quality time with my husband was exactly the distraction I needed.

Sometimes healing isn’t just about physical recovery. Sometimes it’s about finding little moments that remind you how good it feels to laugh again. ❤️

Not me having to put on my sunglasses every time I Not me having to put on my sunglasses every time I have to chop onions because my eyes tear up so bad… 🤣

Ever since I had LASIK surgery a few years ago, chopping onions has been brutal on my eyes. I’m talking instant tears the second I start cutting them 😂 Apparently my eyes became extra sensitive afterward, and honestly it’s been a struggle ever since.

But then I heard about the “wear sunglasses while chopping onions” hack and y’all… why does it actually work?! 😅 So now anytime my hubby isn’t home to take over onion duty, you can catch me in the kitchen wearing sunglasses indoors looking ridiculous but tear-free 😎

Y’all already know I’ve been on a serious freezer Y’all already know I’ve been on a serious freezer meal kick lately since I unfortunately have to go back to work next week 😭 And let me tell you… having a freezer stocked full of easy homemade dinners is about to save me on those busy weeknights!

One of my all-time favorite freezer meals is this homemade chicken pot pie recipe 🥧✨ It definitely takes a little extra work, especially if you make the homemade pie crust from scratch; but trust me, it is SO worth it. The creamy chicken filling, flaky buttery crust, and cozy comfort food vibes make it one of the best dinners ever.

Anytime I make homemade chicken pot pie, I always make two: one for dinner now and one freezer meal for later. And this time, I took my extra frozen chicken pot pie to my sweet mama after her surgery yesterday 💛 It’s honestly the perfect meal to bring someone recovering from surgery, welcoming a new baby, or just going through a hard season because all they have to do is pop it in the oven for an easy homemade comfort meal.

I can’t believe it’s officially been one month sin I can’t believe it’s officially been one month since my endometriosis excision surgery. Honestly, I really thought by now I’d be coming on here saying I finally felt like myself again. I wanted this surgery to be the answer so badly. But the truth is… I’m still struggling every single day.

The lower back pain, hip pain, chronic fatigue, GI issues, insomnia, dizziness, and POTS-like symptoms are all still here. And while my surgeon was absolutely wonderful and removed the endometriosis she found, we’re now starting to realize there may be something more going on underneath it all.

Right now we’re exploring possibilities like EDS, MCAS, and POTS, which honestly feels overwhelming because getting doctors to truly listen and take women seriously can feel like a full time job in itself. I know so many women with chronic illness, endometriosis, and invisible illnesses understand exactly what I mean.

But even though I’m discouraged, I’m not giving up. I know my body, I know something still isn’t right, and I’ll continue advocating for myself until I get answers. The Easiest Pecan Pie Bars

With Thanksgiving coming up right around the corner, I thought I would share with you all the easiest (and tastiest) pecan pie bars. This recipe has been my go to recipe for a few years now and it has always been a hit when I make them for Thanksgiving dessert.

I always have love pecan pie itself, but I hate how much work it takes to prepare and how little servings you get for all your efforts.

With these bars, they are so rich and indulgent, you can slice them up smaller and get more servings out of them this way. Plus, I think it’s much easier to make than regular pecan pie.

Mine always tend to be too runny when I make it and this recipe seems to be tried and true and comes out perfectly every time I make it!

Recipe Notes:

I got the original recipe from Rock Recipes, but I have tweaked a few things from it over the years. Feel free to check out the original recipe too if you have any other questions or concerns on how to make these.

But I promise, these pecan pie bars are super easy and don’t require too much time or effort!

It’s also important to note here that it does call for a food processor to combine the flour, butter, and sugar together to make the shortbread crust.

I don’t have one but I did use my handy dandy Ninja blender since it has a pulse option to it. And guess what!?

It turned out just fine! I’ll link a similar one to mine here below in case you don’t have a food processor either.

The Easiest Pecan Pie Bars

These bars have a buttery shortbread crust and a gooey pecan topping. It's just like cookie bars meets pecan pie!

Ingredients
  

For The Shortbread Crust:

  • 1 3/4 cups all purpose flour
  • 1/2 cup sugar
  • 3/4 cup cold butter

For The Pecan Pie Filling:

  • 2/3 cup packed brown sugar
  • 1/3 cup all purpose flour also add 1 tablespoon of all purpose flour to this mixture too.
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 cups corn syrup dark corn syrup is the best.
  • 2 1/2 cups chopped pecans originally recipe only calls for 2 cups, but I like to have mine with extra pecans so I add in an extra half cup here.

Instructions
 

For The Shortbread Crust:

  • Preheat oven to 325 degrees if you are using a glass baking pan (or preheat to 350 degrees if you are using a different pan).
  • Spray cooking pan with cooking spray throughly. Then place a sheet of parchment paper large enough to cover the whole pan on top of the sprayed cooking pan. This will make it much easier to remove the baked pecan pie bars later.

  • Mix together the 1 and 3/4 cup of flour and 1/2 cup of sugar completely. Then, add in the cool 3/4 cup of butter. It is best to use a food processor for this part because you want the mixture to resemble very fine crumbs.

  • Press the crumb mixture into the bottom of the prepared pan and try to make it as even as you can.

  • Place into preheated oven and bake for about 25 minutes or until it is a nice golden brown color. The original recipe calls for just 20 minutes, but I find that it is not done enough after just 20 minutes for my oven. I did it for just 20 minutes one time and the crust came out a little doughy on the bottom so it just depends on your preference and your oven for how long you bake it here.

For The Pecan Pie Layer:

  • While the shortbread is baking you can now make the top pecan pie layer to these bars. Mix together 1/3 cup plus 1 tablespoon of flour and 2/3 cups of brown sugar throughly to prevent any lumps.

  • Then whisk in the 4 eggs, 1 tablespoon of vanilla, 1/2 teaspoon salt, and 1 1/2 cups dark corn syrup until completely combined.

  • Let this mixture sit for about 15 minutes while the crust bakes and stir it occasionally.
  • Add the pecans to the mixture and stir to combine.

  • Pour topping all over the still hot shortbread crust and place it back in the oven for 50 minutes. Again, the original recipe called for about 40 minutes but I found that wasn't enough time for them to be completely done. You want it to have a little wiggle when you pull it out of the oven but not so much that when you cut into it, it will be runny.

  • Cool the bars in the pan to room temperature and then place in fridge for several hours or even overnight.

  • Once they are completely cool, pull the bars out of the pan with the extra parchment paper and then place on cutting board. Use a serrated knife and saw through the bars, cutting them to your desired size and enjoy!

Freezing the Pecan Pie Bars

If you don’t want to enjoy these right away, you can easily freeze them for later. That’s why I love making them ahead of time for Thanksgiving or Christmas or any other holiday party!

Here they are all cut up. Notice I don’t do a very good job of cutting them evenly lol

After the pecan pie bars have cooled completely, cut them up into little (or big) squares. Then, simply wrap each piece in cling wrap or Press-N-Seal wrap and wrapped place bars into freezer bag.

Then you can freeze them for up to 3 months and just take them out of the freezer the night before your event so they can thaw properly in the fridge.

And since they are individually wrapped, you can just take one or two out at a time!

    I have to try these! I love how easy they are and how delicious they look. I always find pecan pie a bit too heavy for me, but I love the flavors, so these bars look like an amazing ‘lighter’ alternative. 🙂

POV: You survived your first full week back at wor POV: You survived your first full week back at work after endometriosis excision surgery… and this is what recovery really looks like. 😂

I officially made it through my first full week back to work after a month-long surgery leave, and whew… the post-op fatigue is NO joke.

Every evening has looked pretty much the same: clock out, soak my aching body in a scorching hot bath, grab my heating pad, put on my weighted eye mask, and immediately take a cat nap before I can even think about making dinner or doing anything around the house. 😴

I knew recovering from endometriosis excision surgery would take time, but I didn’t expect the exhaustion to hit this hard after returning to work. My body is definitely reminding me that healing isn’t always a straight line.

Right now, this little recovery routine is getting me through:
💛 Hot bath
💛 Heating pad on full blast
💛 Weighted eye mask (shoutout to @nodpodofficial) 
💛 Emergency evening nap

Thankfully, it’s finally the weekend, and I can focus on resting and recharging before doing it all over again next week.

If you’ve had endometriosis excision surgery, how long did the fatigue last for you after returning to work? Please tell me this part doesn’t last forever! 😂👇

POV: You had a rough day at work, but then you rem POV: You had a rough day at work, but then you remember you’re funding your cat’s luxury lifestyle. 😹

Whenever I have a bad day at work, I remind myself that I need that paycheck so my cats can stay home all day, nap in peace, eat snacks, and live their best spoiled-cat lives. 😂

This first week back at work has been ROUGH, y’all. I miss being home with my fur babies more than anything. Honestly, I think my true calling in life is being a stay-at-home cat mom. 🐾

But unfortunately, someone has to pay for the treats, toys, fancy food, and all the other necessities required to maintain this luxury cat lifestyle. And that someone is me. 😅

The funniest part? I don’t even think little Miss Riley misses me. As long as the food bowl stays full and the treats keep coming, she’s perfectly content living her best life while I’m out here working my butt off. 🤣

Anyone else with a chronic illness immediately Goo Anyone else with a chronic illness immediately Google every possible side effect before starting a new medication? Because I swear if there’s a rare reaction listed, somehow I’m the lucky winner. 🤣

Being chronically ill means I’ve tried my fair share of medications over the years, and my body always seems to have a mind of its own. If a medicine is supposed to make people sleepy, I’ll be wide awake all night. If there’s a tiny chance of an adverse reaction, somehow I’m usually that tiny percentage. 😅

So starting a new medication is always a little nerve-wracking for me. Part of me is hopeful it’ll finally provide some relief, and the other part is preparing for whatever random side effect my body decides to throw my way.

Here’s hoping this one actually helps my symptoms without adding a whole new list of problems. 🤞😂

POV: being on surgery recovery leave for a month t POV: being on surgery recovery leave for a month turned me into a full-time homebody 🤣

Honestly, staying home healing after surgery has taught me one thing… I never want to leave my house again 😂 Being cozy at home with my cats, resting, binge watching shows, and avoiding the outside world has been absolutely glorious. I truly understand the “stay at home cat mom” lifestyle now lol.

At this point, I have everything I need right here at home. Peace, comfy clothes, snacks, my pets, and zero social obligations 🤣 Meanwhile, every time I actually leave the house, I come back completely exhausted.

So the fact that I have to go back to work today after a month of recovery is honestly going to be SUCH a rough adjustment 😅 I’m not mentally prepared to rejoin society yet lol. Anyone else secretly love being home way too much?!

Honestly, I’ve been struggling with the thought of Honestly, I’ve been struggling with the thought of going back to work while still recovering from surgery. Between the physical healing and the emotional side of post-surgery recovery, I’ve been feeling pretty down lately. So this comedy date night ended up being exactly what I needed.

We bought tickets to see @johnbcrist months ago, long before I had any idea I’d be spending a month on surgery leave. Turns out the timing couldn’t have been more perfect. This was our third time seeing him live, and he absolutely delivered. I laughed so hard that for a couple of hours, I completely forgot about returning to work, ongoing recovery, and all the stress waiting for me next week. 🤣

Before the show, we had dinner at @redgingerasianbistro and finished the night with dessert at @timesbarandcoffee which made the whole evening even better. Good food, lots of laughs, and quality time with my husband was exactly the distraction I needed.

Sometimes healing isn’t just about physical recovery. Sometimes it’s about finding little moments that remind you how good it feels to laugh again. ❤️

Not me having to put on my sunglasses every time I Not me having to put on my sunglasses every time I have to chop onions because my eyes tear up so bad… 🤣

Ever since I had LASIK surgery a few years ago, chopping onions has been brutal on my eyes. I’m talking instant tears the second I start cutting them 😂 Apparently my eyes became extra sensitive afterward, and honestly it’s been a struggle ever since.

But then I heard about the “wear sunglasses while chopping onions” hack and y’all… why does it actually work?! 😅 So now anytime my hubby isn’t home to take over onion duty, you can catch me in the kitchen wearing sunglasses indoors looking ridiculous but tear-free 😎 

If you’ve ever wondered how to stop crying while cutting onions, consider this your sign to try the sunglasses trick! It may look silly, but it seriously helps block those onion fumes from hitting your eyes 👏

Y’all already know I’ve been on a serious freezer Y’all already know I’ve been on a serious freezer meal kick lately since I unfortunately have to go back to work next week 😭 And let me tell you… having a freezer stocked full of easy homemade dinners is about to save me on those busy weeknights!

One of my all-time favorite freezer meals is this homemade chicken pot pie recipe 🥧✨ It definitely takes a little extra work, especially if you make the homemade pie crust from scratch; but trust me, it is SO worth it. The creamy chicken filling, flaky buttery crust, and cozy comfort food vibes make it one of the best dinners ever.

Anytime I make homemade chicken pot pie, I always make two: one for dinner now and one freezer meal for later. And this time, I took my extra frozen chicken pot pie to my sweet mama after her surgery yesterday 💛 It’s honestly the perfect meal to bring someone recovering from surgery, welcoming a new baby, or just going through a hard season because all they have to do is pop it in the oven for an easy homemade comfort meal.

If you love easy freezer meals, homemade comfort food recipes, or make-ahead dinners for busy families, you definitely need to try this one!

I can’t believe it’s officially been one month sin I can’t believe it’s officially been one month since my endometriosis excision surgery. Honestly, I really thought by now I’d be coming on here saying I finally felt like myself again. I wanted this surgery to be the answer so badly. But the truth is… I’m still struggling every single day.

The lower back pain, hip pain, chronic fatigue, GI issues, insomnia, dizziness, and POTS-like symptoms are all still here. And while my surgeon was absolutely wonderful and removed the endometriosis she found, we’re now starting to realize there may be something more going on underneath it all.

Right now we’re exploring possibilities like EDS, MCAS, and POTS, which honestly feels overwhelming because getting doctors to truly listen and take women seriously can feel like a full time job in itself. I know so many women with chronic illness, endometriosis, and invisible illnesses understand exactly what I mean.

But even though I’m discouraged, I’m not giving up. I know my body, I know something still isn’t right, and I’ll continue advocating for myself until I get answers.
