Plot twist: Riley’s biological mom is still part o Plot twist: Riley’s biological mom is still part of the family too! 😹🐾

A few years ago on Valentine’s Day morning, my mom discovered a mama cat and her three kittens on her front porch. As a lifelong cat lover, there was absolutely no way I wasn’t bringing one of those sweet rescue kittens home once she was old enough. And that’s how Riley became part of our family. ❤️

Fast forward to today, and Riley has grown into the funniest, sassiest, most personality-filled cat I’ve ever had. She’s definitely not a lap cat, and she makes you work for every ounce of attention and affection, but somehow that just makes me love her even more. 😂

The best part? My mom ended up keeping Riley’s mom, Smoke, while finding loving homes for all the other kittens. So Riley’s mama is still around, and we get to see her from time to time. 🥹🐱

It feels like this whole rescue cat story was just meant to be. ❤️

I proudly present… the most expensive homegrown pe I proudly present… the most expensive homegrown pepper we’ve ever grown. 🌶️🤣

After all the money we’ve spent on raised garden beds, soil, plants, fertilizer, and supplies, this little pepper is basically worth its weight in gold! 😂 But honestly, there’s nothing more rewarding than walking outside and harvesting fresh vegetables from your own backyard garden.

And let me tell you… this pepper was DELICIOUS! 🙌 Now I’m anxiously waiting for our cucumbers, squash, and tomatoes to really start producing. There’s just something so exciting about watching a vegetable garden grow and finally getting to enjoy the fruits (and veggies!) of your labor.

Apparently, if I had actually read the product description, I would have known that. But who has time for details when you’re busy adding things to your cart? 😂

After a LOT of fluffing, shaping, and styling, though, these faux hanging ferns turned out so good! I love using artificial hanging baskets on our porch because they’re completely low-maintenance, stay green year-round, and don’t require me to climb a ladder every few days to water them. As someone who’s vertically challenged, that’s a major win. 🤣

Maybe it’s my socially awkward, overthinking brain. Maybe it’s because I spend 99% of my free time at home and have fully embraced my introvert era. Or maybe it’s the fact that every time I meet someone new, I replay the entire conversation in my head for the next 3-5 business days. 🤣

And while I’ve never been officially diagnosed as neurodivergent, let’s just say some of those traits hit a little too close to home. 🧠😂

POV: You survived your first full week back at wor POV: You survived your first full week back at work after endometriosis excision surgery… and this is what recovery really looks like. 😂

I officially made it through my first full week back to work after a month-long surgery leave, and whew… the post-op fatigue is NO joke.

Every evening has looked pretty much the same: clock out, soak my aching body in a scorching hot bath, grab my heating pad, put on my weighted eye mask, and immediately take a cat nap before I can even think about making dinner or doing anything around the house. 😴

I knew recovering from endometriosis excision surgery would take time, but I didn’t expect the exhaustion to hit this hard after returning to work. My body is definitely reminding me that healing isn’t always a straight line.

Right now, this little recovery routine is getting me through:
💛 Hot bath
💛 Heating pad on full blast
💛 Weighted eye mask (shoutout to @nodpodofficial) 
💛 Emergency evening nap

Thankfully, it’s finally the weekend, and I can focus on resting and recharging before doing it all over again next week.

If you’ve had endometriosis excision surgery, how long did the fatigue last for you after returning to work? Please tell me this part doesn’t last forever! 😂👇

Sweet Potato Casserole

Sweet Potato Casserole is a staple in southern cuisine in my opinion! We have this pretty much on every special holiday, like Thanksgiving, Christmas, Easter, the list goes on and on.

But it is definitely a tried and true recipe and it is always the perfect side dish for those special meals and occasions!

Plus, it’s really easy to make and only requires a handful of ingredients, most of which you probably already have in your pantry!

Recipe Notes:

You don’t need too many ingredients for this recipe and it is fairly simple to make. You of course need sweet potatoes, sugar, milk, eggs, brown sugar, vanilla, chopped pecans, flour, and butter- lots of butter!

Can’t be a southern recipe without a lot of butter right?!

This sweet potato casserole recipe has been handed down from generation to generation in our family, just like my Broccoli Casserole recipe too.

I always remember my Meme making this, and then my mom, and now I make it all the time too! I just love recipes with a good history like that.

I usually make this for my husband’s side of the family now. Especially when we all get together for Thanksgiving and Christmas.

It is the perfect side dish and definitely goes so well with turkey and ham! It’s honestly more like dessert since there is so much butter and sugar in it too.

But in reality, dessert is my favorite part of any meal so that is probably why I like this recipe so much!

Easy Sweet Potato Casserole

Sweet Potato Casserole

The perfect, indulgent holiday side dish!

Ingredients
  

For The Sweet Potatoes:

  • 6-8 sweet potatoes
  • 1 cup sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup milk
  • 1/3 cup butter
  • 1 tsp vanilla

For The Topping:

  • 1 cup brown sugar
  • 1/3 cup self-rising flour
  • 1/3 cup butter melted
  • 3/4 cup chopped pecans You can add as much or as little chopped pecans as you like!

Instructions
 

To Make The Sweet Potatoes:

  • Peel and boil sweet potatoes until they are soft and tender. About 15 minutes or so.
    Peeled Sweet Potatoes
  • Mash sweet potatoes with potato masher.
    Mash Sweet Potatoes
  • Add in 1 cup sugar, 1/2 teaspoon salt, 2 eggs beaten with the 1/2 cup of milk (that way the hot potatoes do not cook the eggs) 1/3 cup of better, and 1 teaspoon of vanilla. Mix well.
    Adding in ingredients to sweet potatoes
  • Pour into greased 9×13 pan.

To Make The Topping:

  • Mix 1 cup brown sugar, 1/3 cup self rising flour, and melted 1/3 cup of butter together.
  • Sprinkle mixture on top of the sweet potatoes.

  • Top it off with chopped pecans. You can put as little or as much as you want on here!

  • Bake at 350 degrees for 35 minutes and enjoy!

Recipe End Notes:

As you can see, this is another simple and easy recipe, which I always love.

The hardest part for me is to chop all the sweet potatoes before boiling them, so that’s the one thing I get my hubby to help me with!

Plot twist: Riley’s biological mom is still part o Plot twist: Riley’s biological mom is still part of the family too! 😹🐾

A few years ago on Valentine’s Day morning, my mom discovered a mama cat and her three kittens on her front porch. As a lifelong cat lover, there was absolutely no way I wasn’t bringing one of those sweet rescue kittens home once she was old enough. And that’s how Riley became part of our family. ❤️

Fast forward to today, and Riley has grown into the funniest, sassiest, most personality-filled cat I’ve ever had. She’s definitely not a lap cat, and she makes you work for every ounce of attention and affection, but somehow that just makes me love her even more. 😂

The best part? My mom ended up keeping Riley’s mom, Smoke, while finding loving homes for all the other kittens. So Riley’s mama is still around, and we get to see her from time to time. 🥹🐱

It feels like this whole rescue cat story was just meant to be. ❤️

I proudly present… the most expensive homegrown pe I proudly present… the most expensive homegrown pepper we’ve ever grown. 🌶️🤣

After all the money we’ve spent on raised garden beds, soil, plants, fertilizer, and supplies, this little pepper is basically worth its weight in gold! 😂 But honestly, there’s nothing more rewarding than walking outside and harvesting fresh vegetables from your own backyard garden.

And let me tell you… this pepper was DELICIOUS! 🙌 Now I’m anxiously waiting for our cucumbers, squash, and tomatoes to really start producing. There’s just something so exciting about watching a vegetable garden grow and finally getting to enjoy the fruits (and veggies!) of your labor.

Apparently, if I had actually read the product description, I would have known that. But who has time for details when you’re busy adding things to your cart? 😂

After a LOT of fluffing, shaping, and styling, though, these faux hanging ferns turned out so good! I love using artificial hanging baskets on our porch because they’re completely low-maintenance, stay green year-round, and don’t require me to climb a ladder every few days to water them. As someone who’s vertically challenged, that’s a major win. 🤣

If you’re looking for realistic faux outdoor plants, easy porch decorating ideas, or low-maintenance outdoor decor, I highly recommend giving these a try!

I’m especially excited that we finally got our flower beds refreshed and ready for the season! 🌸🐦 The colorful blooms have already started attracting hummingbirds, and watching them dart around the flowers from inside the house each morning has quickly become one of my favorite parts of the day.

Maybe it’s my socially awkward, overthinking brain. Maybe it’s because I spend 99% of my free time at home and have fully embraced my introvert era. Or maybe it’s the fact that every time I meet someone new, I replay the entire conversation in my head for the next 3-5 business days. 🤣

And while I’ve never been officially diagnosed as neurodivergent, let’s just say some of those traits hit a little too close to home. 🧠😂

POV: You survived your first full week back at wor POV: You survived your first full week back at work after endometriosis excision surgery… and this is what recovery really looks like. 😂

I officially made it through my first full week back to work after a month-long surgery leave, and whew… the post-op fatigue is NO joke.

Every evening has looked pretty much the same: clock out, soak my aching body in a scorching hot bath, grab my heating pad, put on my weighted eye mask, and immediately take a cat nap before I can even think about making dinner or doing anything around the house. 😴

I knew recovering from endometriosis excision surgery would take time, but I didn’t expect the exhaustion to hit this hard after returning to work. My body is definitely reminding me that healing isn’t always a straight line.

Right now, this little recovery routine is getting me through:
💛 Hot bath
💛 Heating pad on full blast
💛 Weighted eye mask (shoutout to @nodpodofficial) 
💛 Emergency evening nap

Thankfully, it’s finally the weekend, and I can focus on resting and recharging before doing it all over again next week.

If you’ve had endometriosis excision surgery, how long did the fatigue last for you after returning to work? Please tell me this part doesn’t last forever! 😂👇
