Here’s everything you’ll need to make these homemade apple cider cookies:
- 2 cups apple cider
- ½ cup butter
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 ½ teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- ½ teaspoon ground cardamom
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- ¼ cup granulated sugar
- ½ cup powdered sugar
How to Make Apple Cider Crinkle Cookies
Step 1: Reduce the Apple Cider
Pour 2 cups of apple cider into a medium saucepan and bring it to a boil over high heat.
Continue boiling until the cider has reduced to approximately ¼ cup. At this point, it should be thick and syrup-like.
Set the reduced apple cider aside and allow it to cool completely before adding it to your cookie dough.

Step 2: Make the Brown Butter
Melt ½ cup of butter in a medium sauté pan over medium heat.
Continue cooking the butter until it begins to brown and develops a nutty aroma, approximately 3–4 minutes.

Remove the brown butter from the heat and pour it into the bowl of a stand mixer. Place it in the freezer for 10–15 minutes, or until it begins to solidify.
You don’t want the butter to become completely firm. You’re looking for a consistency similar to softened butter.

Step 3: Combine the Dry Ingredients
In a medium mixing bowl, combine the all-purpose flour, cinnamon, baking powder, ground ginger, cardamom, nutmeg, and salt.
Whisk everything together until evenly combined and set aside.

Step 4: Make the Apple Cider Cookie Dough
Cream the cooled brown butter and brown sugar together until light and fluffy, approximately 3 minutes.
Add the eggs one at a time, mixing well after each addition.
Pour in the ¼ cup of reduced apple cider and vanilla extract and continue mixing until everything is well combined.
Gradually add the dry ingredients to the wet ingredients and mix just until a cookie dough forms. Be careful not to overmix.
Wrap the cookie dough and place it in the refrigerator for at least 2 hours, or until the dough is firm.

Line two baking sheets with parchment paper.
