10 YEARS. 🤍😭 Today is our 10 year wedding anniver 10 YEARS. 🤍😭

Today is our 10 year wedding anniversary, and I truly cannot believe an entire decade has already gone by. Somehow, it feels like we were just saying “I do,” and at the same time, I can’t imagine a version of my life without you in it.

Logan, you are my rock, my safe space, my biggest supporter, my constant encourager, and most importantly, my best friend. 🤍

This past year has probably been one of the hardest years we’ve walked through together. Between everything going on with my health, the uncertainty surrounding my job and my future, and all the unknowns we’ve had to navigate, life has looked a lot different than I ever imagined it would.

But through every hard day, every appointment, every disappointment, every fear, and every unknown, you have been right there beside me. You’ve supported me, encouraged me, taken care of me, made me laugh when I needed it most, and reminded me over and over again that I never have to go through any of it alone.

And I don’t think I’ll ever be able to fully put into words how much that means to me.

I’m so incredibly blessed that God gave me you. 🥹🤍 I would choose you over and over again in every lifetime.

Southern Potato Salad

Y’all I LOVE a good ol southern potato salad during the summer. But I am pretty picky about them. I see a lot of different ways that people make them.

But this is hands down the best way to make it (in my humble opinion lol)! It took me a few times to nail it, but I think I finally did it! My mom always made the best potato salad growing up and I always wanted to replicate her recipe.

Although, she doesn’t technically have a “recipe” for it. She normally just throws everything together and it turns out perfectly.

For me, I need a recipe or something I can follow every time because if not, I forget what I used the last time I made it. I am sure I am not the only one like that right?!

Ingredients Needed:

Here is everything you need to get started making this southern potato salad:

  • 4-6 Russet Potatoes, peeled and chopped
  • 6 hard boiled eggs
  • 2 1/2 tsp salt, divided
  • 1/2 a onion, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/3 cup sweet relish
  • 1/4 tsp black pepper
  • Dash of paprika, for garnish

Peel and Boil The Potatoes

The first step to making this delicious southern potato salad is to peel and boil the potatoes. I usually do around 6-8 russet potatoes, depending on the size.

It’s best to quarter them and then add them into a pot of boiling water. I also add in 2 teaspoons of salt to the boiling water.

You want to cook the potatoes until they are tender enough to pierce with a fork. Around 12-15 minutes. But not too much longer because then they become soft enough for mashed potatoes.

I like my potato salad to be chunky. I don’t like it to be mashed up. But this can be a personal preference.

If you want your salad to have more of a mashed potato vibe, then cook them a little longer if you want!

Now they are ready to be boiled!

Once potatoes are done cooking, drain them and let them cool!

Make Hard Boiled Eggs

While your potatoes are cooking, you can also use this time to make the hard boiled eggs. I feel like this salad can be a labor of love sometimes because there are a lot of steps to it.

But trust me, it’s worth it because it is so delicious. Plus, I usually make enough to where we have leftovers for the next several days so I don’t have to worry about anymore side dishes then! It is very filling so that helps!

I usually do around 6 hard boiled eggs and chop them up. You can do more or less depending on what you like but I do like my potato salad to have a lot of eggs in it!

Mix It All Up

Now for the fun part to this southern potato salad- mix it all up! I start by chopping up my onion and adding it to the bowl first.

Then, I add in the other ingredients such as the mayo and mustard.

Now when you start mixing it up, it looks like a sloppy, goopy mess. Trust me here, it will all work out! Just mix together the mayonnaise, mustard, sweet relish, salt and pepper real well before adding in the eggs and potatoes.

The funny thing is I am not a huge mayonnaise fan. I hate the smell of it and I don’t like it on my sandwiches (I prefer honey mustard please!).

But it is necessary for this recipe. It makes the potatoes nice and creamy and I don’t mind the taste of it in the salad. Mainly because you don’t even know it’s in there once it is all mixed together!

Also, I think my hatred for mayo came from my brother. He decided it would be funny to take a turkey baster and remove the cream filling from a cream filled doughnut and replace it with mayonnaise instead.

I did not know this and took a huge bite out of it and about died! Hence, I am traumatized and approach eating doughnuts and anything that calls for mayo as an ingredient very cautiously now.

Add In Potatoes and Eggs

After you mixed everything together, now you can add in the cooled potatoes and peeled hard boiled eggs! Make sure to mix well and have everything coated good in the creamy mixture.

Once everything is mixed, sprinkle some paprika on top for garnish. This step is totally optional, but it does make it look and taste good!

After sprinkling on the paprika, place in the fridge and let chill for several hours before serving.

And that’s it! You now have a delicious southern potato salad to enjoy!

Ingredients
  

  • 4-6 Russet Potatoes, peeled and quartered
  • 2 1/2 tsp Salt, divided
  • 6 Hard Boiled Eggs
  • 1/2 Onion, chopped
  • 1/2 cup Mayonnaise
  • 1/4 cup Yellow Mustard
  • 1/3 cup Sweet Relish
  • 1/4 tsp Ground Black Pepper
  • Dash Paprika

Instructions
 

For the Potatoes:

  • Bring a pot of water to a boil. Once boiling, add in 2 tsp of salt.
  • While water is boiling, Peel and quarter the potatoes.
  • Add potatoes to the pot of boiling water. Cook potatoes until they can easily be pierced with a fork, But not too mushy. About 12-15 minutes.
  • Drain the potatoes and let them cool.

For the Salad:

  • Hard boil eggs and then place them in an ice bath to cool.
  • While eggs are cooling, combine the remaining 1/2 tsp salt, 1/4 tsp black pepper, 1 cup mayonnaise, 1/4 cup yellow mustard, 1/3 cup sweet relish, and 1/2 of a onion in a bowl.
  • Add in the cooled potatoes to the mixture and stir until combine.
  • Peel and then chop hard boil eggs into small pieces.
  • Add the eggs into the salad and mix again.
  • Top with a garnish of paprika if desired and place in the fridge to chill.
  • Let chill for several hours before serving and then enjoy!

    The secret ingredient to true southern potato salad I discovered only a couple weeks ago are the boiled eggs! Mine never turned that lovely yellow color with just mustard; it is the egg yolks that give it the creamy texture and color.

      Thank you so much! You should definitely make it! You could always use more paprika or even red pepper flakes sprinkled on top for a spicer feel. Maybe even chop in a few jalapeños as well? I’ve never made it spicy, but honestly that is a good idea because I love spicy foods!

    This is a lot like my southern grandma’s recipe. Delicious! I do it the same way except I use half mayo, half sour cream instead of all mayo. Plus, I put in one or two fewer eggs – we’re making potato salad here after all, not egg salad!

Little Miss Riley is VERY particular when it comes Little Miss Riley is VERY particular when it comes to cat toys. I can buy her the cutest toy ever and she’ll look at me like, “And what exactly am I supposed to do with this?” 🤣

But cat scratching pads?! Those are her absolute FAVORITE. She’s just about worn her old one out, so when I spotted this adorable Halloween cat scratching pad at Target, obviously I had to bring it home for her. 🎃

After a few very thorough sniffs, an inspection, and some test scratches… we officially have Riley’s approval! 👏🏻😹

Honestly, I’m just glad I managed to buy something that passed her incredibly strict quality-control standards. 😂

Confession: I’m one of those people who would rather lick the batter or sneak some cookie dough than wait for the finished dessert. 🤣 And don’t come for me about the raw batter…I’ve been doing it my whole life and I’m still here 😜

Which is exactly why this pumpkin butter cake is one of my FAVORITE fall desserts. It’s fully baked, but the middle stays unbelievably soft, rich, and ooey gooey. 🙌🏻

You get a buttery yellow cake base topped with a creamy pumpkin layer that basically melts in your mouth. And add a big dollop of whipped cream on top?! CHEF’S KISS. 🤌🏻🎃

Thankfully, Charlie is cute enough to get away with it… and clearly VERY unbothered by the fact that she completely ruined my outfit. 😹

10 YEARS. 🤍😭 Today is our 10 year wedding anniver 10 YEARS. 🤍😭

Today is our 10 year wedding anniversary, and I truly cannot believe an entire decade has already gone by. Somehow, it feels like we were just saying “I do,” and at the same time, I can’t imagine a version of my life without you in it.

Logan, you are my rock, my safe space, my biggest supporter, my constant encourager, and most importantly, my best friend. 🤍

This past year has probably been one of the hardest years we’ve walked through together. Between everything going on with my health, the uncertainty surrounding my job and my future, and all the unknowns we’ve had to navigate, life has looked a lot different than I ever imagined it would.

But through every hard day, every appointment, every disappointment, every fear, and every unknown, you have been right there beside me. You’ve supported me, encouraged me, taken care of me, made me laugh when I needed it most, and reminded me over and over again that I never have to go through any of it alone.

And I don’t think I’ll ever be able to fully put into words how much that means to me.

I’m so incredibly blessed that God gave me you. 🥹🤍 I would choose you over and over again in every lifetime.

Happy 10 year anniversary, Logan!! I love you more than you’ll ever know. Here’s to the next 10 years, and every single year after that. 🥂🤍

Just one of those real-life moments where you have to laugh so you don’t cry and keep rolling with life’s punches.

When my hubby first got this rotating watch displa When my hubby first got this rotating watch display case, I’m not gonna lie… I thought he was being a little ridiculous and extra 😂 Like, do the watches really need their own light-up display?!

Turns out… yes. Yes, they do. 🤣

Now I totally get the hype! I love the blue LED light in the background, the slow rotating display, and how it keeps his watch collection organized instead of having watches scattered all over the place. It honestly looks SO cool sitting out too!

Remember when I painted that Target cat statue to Remember when I painted that Target cat statue to look just like my Charlie?! 😹 Well apparently, I forgot to get Riley’s approval first.

Little Miss Riley discovered the finished DIY cat statue proudly displayed on the porch, and her reaction absolutely sent me. 💀 

At first, I’m pretty sure she thought we had brought home a FOURTH cat without consulting her. She kept staring at it from a safe distance like, “Ummm… excuse me?! Who is THAT?!” 👀🐈

Eventually, she worked up enough courage to jump up there and confront the mysterious imposter cat herself… only to realize it was FAKE. 🤣

And then, of course, she immediately had to play it cool like she totally knew that the entire time. 😹

Nothing humbles a cat faster than realizing she just tried to intimidate a painted statue. 😂

Cat moms, please tell me I’m not the only one whose cats get suspicious over literally ANY new piece of decor?!

I turned these plain white pumpkins into DIY golf I turned these plain white pumpkins into DIY golf ball pumpkins, and I think I just found the perfect fall decor for a golfer’s man cave!

I used my Cricut to cut out some of my hubby’s favorite golf brand logos, then applied them to the pumpkins with transfer tape. That’s literally it! Such an easy Cricut fall craft, but they turned out SO cute.

You could definitely hand-paint the logos if you don’t have a Cricut…but y’all know me and my shaky hands. 😂 Painting tiny golf logos was absolutely NOT happening, so my Cricut saved the day!

Now these golf-themed pumpkins are officially my favorite piece of fall decor in my hubby’s man cave garage. Because apparently this is how you sneak fall decor into a golf-obsessed husband’s space. 😉⛳️

I made this easy pumpkin pecan coffee cake to celebrate the start of fall, and y’all… I think I just found my new favorite pumpkin recipe!

The pumpkin coffee cake itself is incredibly soft and moist with all those warm pumpkin spice flavors, but the BEST part might be that buttery cinnamon pecan streusel topping. 🤤 It gives every bite the perfect little crunch!

And despite how good it looks, this recipe is actually SO easy to make. You don’t even need a stand mixer, just a couple of bowls, a baking dish and about 10 minutes of prep!

It’s the perfect easy fall breakfast for a slow weekend morning with a cup of coffee, but it would also be SO good for a fall brunch, Thanksgiving morning or even dessert.

Basically, if you’re looking for an excuse to start baking all the pumpkin recipes… this is it. 😂🎃

I have no idea when spiderwebs became a cat snack, but apparently Toby would give them 10/10. At this point, I might as well put him to work around the rest of the house. If you’re going to eat cobwebs, buddy, at least get the ones in the corners too. 🤣

We had the BEST time at The Cliffs at Walnut Cove We had the BEST time at The Cliffs at Walnut Cove this weekend watching the pros play, soaking up the gorgeous mountain views, and just enjoying such a fun day together!

There’s something extra special about a golf weekend in Asheville, NC, especially when you get to experience a beautiful course like Walnut Cove and see professional golfers in action. And while I may not know everything happening on the course 😂, I can definitely appreciate the atmosphere, the views, and a good excuse for a fun weekend out!

Western North Carolina really does have some of the prettiest places. 🤍
