Mine is literally hanging on by one tiny corner (like 90% detached 🤢), and I can’t decide if I should just pull it off or leave it alone. The problem is it hurts every time I put on socks or shoes because it keeps catching and tugging. 😩

This actually happened to me years ago after wearing cowboy booties in Nashville that rubbed my pinky toes raw, and I ended up losing both pinky toenails. They eventually grew back completely normal, so I’m so confused why it’s happening again.

I haven’t stubbed my toe, I haven’t had a pedicure in over 6 weeks, and I’ve mostly been living in sandals all summer with my usual tennis shoes. So what in the world would make a toenail suddenly start falling off? 🤷🏼‍♀️

Should I just go ahead and pull it off since it’s barely attached, or leave it alone and let it come off on its own? Tell me what you would do because I’m officially accepting all the toenail advice I can get. 😂

If you’ve been following my chronic illness journe If you’ve been following my chronic illness journey for a while, you already know how many doctors, specialists, tests, and appointments I’ve been through. Time after time, I was told I was “fine,” “everything looks normal,” or that it was “just anxiety.”

But after my appointment with @carolina_functional_neurology, I finally felt heard.

They agreed that what I’ve been experiencing is not normal. They believe I have POTS, and they also think there could be other neurological issues that need to be investigated. After years of questioning myself because of medical gaslighting, hearing a doctor validate my symptoms was something I’ll never forget.

At this point, I don’t think one Netflix documentary would be enough to cover this whole journey. 🤣

The saddest part? I know so many of you have messaged me saying you’ve experienced the exact same thing. It’s heartbreaking how common medical gaslighting has become, especially for people living with chronic illness or invisible illnesses.

Yesterday felt like a turning point. 🤍 We drove t Yesterday felt like a turning point. 🤍

We drove to Charlotte to see a functional neurologist, and for the first time in a long time, I left an appointment feeling heard instead of dismissed.

After listening to everything I’ve been experiencing and putting me through what they jokingly called the “Brain Olympics” 😂 (seriously…SO many neurological tests), they agreed that my symptoms are not normal. They also agree that I likely have POTS, which honestly brought so much validation after everything I’ve been through.

The testing also showed signs that something may be going on with my cerebellum that’s causing my autonomic nervous system to misfire. Because of that, they want me to get a brain MRI to investigate further, including looking for things like Chiari malformation. They’re also ordering additional bloodwork and testing for celiac disease to make sure nothing else is contributing to everything I’ve been experiencing.

Am I nervous? Absolutely.

But for the first time in a very long time, I also feel hopeful.

I know none of these are answers yet, but having a doctor who believes me, listens, and is committed to figuring this out means more than I can explain. After years of wondering if I was just imagining things or being told my tests were “normal,” that validation alone feels like a huge win.

Thank you to everyone who has checked on me, prayed for me, encouraged me, and shared your own experiences. Your support has helped me keep pushing for answers when it would’ve been easier to give up.

I’m taking this journey one step at a time, and I’ll continue to keep you all updated. ❤️

Pumpkin Pie Bars with Maple Cinnamon Whipped Cream

Since it is almost Thanksgiving time here, I thought I would share with you all one of my most favorites desserts for the season. I make these pumpkin pie bars with maple cinnamon whipped cream every year and they are always a big hit!

I have always loved pies, but I feel like a pie doesn’t go a long enough way. And especially if you have a big family, then a pie just doesn’t last too long.

Also, I am all about leftovers, even when it comes to desserts too! So that’s why I like to make pumpkin pie bars instead of pie. They last a little bit longer and even taste better in my opinion!

Making the Shortbread Crust

These pumpkin pie bars are originally from Willow Bird Baking’s Blog. But I have tweaked a few things from the original recipe. Mainly the fact that I double the recipe.

The original recipe only calls for an 8 x 8 baking dish. But as I mentioned above, I love having extra! So I increased the ingredients to make it into a 9 x 13 baking dish instead.

Also, this recipe is divided up into three steps, but they are all super simple to do!

Making the shortbread crust

The first part is to make your shortbread crust. Which in my opinion again, is the best part of this recipe and what makes it even better than just regular pie.

The shortbread crust is thick and tastes just like a shortbread cookie, which I also love! You need a food processor, or in my case a Ninja Blender since I don’t have a food processor.

I have mentioned this before in my previous recipes, but I always use my Ninja because it has a pulse option too, just like a food processor!

But anyways, you pulse all the shortbread crust ingredients in the food processor/blender until they are fully incorporated.

Then, you press it into a greased 9 x 13 baking dish using your hands. I have also found that using a flat bottom glass works really well for this part too.

Then, throw it in a preheated oven at 350 degrees for about 25 minutes or until a nice golden brown.

Make the Pumpkin Pie Filling

The next step to these pumpkin pie bars are to make the filling to go on top of the crust. Simply, grab two bowls, one for the wet ingredients and one for the dry ingredients, and mix away!

You can do this step while the shortbread crust bakes.

Once you have both your wet and dry ingredients mixed, add the dry ingredients into the wet ingredients mixing bowl. Then, mix well until fully incorporated.

After you have it all mixed, pour on top of the cooked shortbread crust.

Bake the Pumpkin Pie Bars

After you have poured the pumpkin pie filling onto the crust, throw it back in the oven for another 35 minutes or so. You’ll notice a significant change in color once it’s done. Looks more like pumpkin pie now!

Also, let the bars cool throughly before attempting to add the whipped topping. If you add the topping too soon, it will just melt off.

I like to chill mine completely overnight, but you can also just chill it for 2 hours if you’re in a time crunch!

Make the Maple Cinnamon Whipped Cream

Now, here is the very last step to these delicious pumpkin pie bars! Making the maple cinnamon whipped cream is my favorite because it really elevates this dessert and brings it to the next level!

I had never had maple cinnamon whipped cream before, but man, does it compliment pumpkin flavor very well! And, I always have plenty leftover so I like to add it to my coffee too.

Makes for a delicious cup of coffee as well! To make it, just throw all the ingredients in the bowl of a stand mixer and beat until stiff peaks form.

Here is the maple cinnamon whipped cream all mixed up!

After you have the whipped cream all mixed up, you can then pipe it onto your pumpkin pie bars. You can either do it to each individual bar, or to the whole thing. I like to go ahead and pipe it on the whole thing.

That way, it looks pretty and presentable for Thanksgiving! But of course, you don’t have to if you don’t want to. I use a bakers decorating tool pictured below to make this process easier.

I will link some similar products below too in case you don’t have one. If you do a lot of baking/decorating then I highly recommend them because it saves you so much time.

It’s also much easier to use than piping bags.

I always keep the leftovers in the fridge and enjoy them for several days after. I’m telling you, these pumpkin pie bars are definitely worth the work and you will love them much more than regular old pie!

Pumpkin Pie Bars with Maple Cinnamon Whipped Cream

Ingredients
  

For the Shortbread Crust:

  • 2 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1 pinch salt
  • 1 cup butter

For the Pumpkin Pie Filling:

  • 1/2 cup granulated sugar (plus the 4 tablespoons of sugar listed below too)
  • 4 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 2 eggs lightly beaten
  • 1 can pumpkin puree 15 oz
  • 1 1/2 cups evaporated milk

For the Maple Cinnamon Whipped Cream:

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 tsp cinnamon
  • 1 tsp maple extract

Instructions
 

For the Shortbread Crust:

  • Preheat oven to 350 degrees. Spray a glass 9 x 13 pan with non stick cooking spray.
  • Process the flour, powdered sugar, and salt together for a few seconds in a food processor.
  • Add in the cold butter and process again until fully incorporated.
  • Press mix into the greased glass baking pan. Use the bottom of a glass to press mixture down firmly.
  • Bake for 25 minutes or until golden brown.

For the Pumpkin Pie Filling:

  • In a small bowl, mix together sugar, cinnamon, salt, ginger, and cloves.
  • In a large bowl, combine eggs, pumpkins, and sugar mixture.
  • Gradually mix in evaporated milk.
  • Pour mixture onto prepared shortbread crust.
  • Bake for 32-35 minutes. And cool for at least 2 hours before serving. I place mine in the fridge overnight.

For the Maple Cinnamon Whipped Cream:

  • Once bars are completely cool, start making the whipped cream.
  • Combine heavy whipping cream, powdered sugar, cinnamon, and maple extract in the bowl of a stand mixer until stiff peaks form.
  • Pipe mixture on top of bars and enjoy!

Y’all… I need some advice. 😅 Has anyone ever had t Y’all… I need some advice. 😅 Has anyone ever had their pinky toenail almost completely fall off for absolutely no reason?

Mine is literally hanging on by one tiny corner (like 90% detached 🤢), and I can’t decide if I should just pull it off or leave it alone. The problem is it hurts every time I put on socks or shoes because it keeps catching and tugging. 😩

This actually happened to me years ago after wearing cowboy booties in Nashville that rubbed my pinky toes raw, and I ended up losing both pinky toenails. They eventually grew back completely normal, so I’m so confused why it’s happening again.

I haven’t stubbed my toe, I haven’t had a pedicure in over 6 weeks, and I’ve mostly been living in sandals all summer with my usual tennis shoes. So what in the world would make a toenail suddenly start falling off? 🤷🏼‍♀️

Should I just go ahead and pull it off since it’s barely attached, or leave it alone and let it come off on its own? Tell me what you would do because I’m officially accepting all the toenail advice I can get. 😂

And at this point, I guess my body has decided to rebel from the top of my head all the way down to my toenails. 🫠🤣 #toes #toenails #pinkytoe #pinkytoes #toenail

Please tell me I’m not the only one! I’m only 33, but lately I cannot sleep to save my life. Between tossing, turning, and staring at the ceiling, my Kindle and a cup of tea have basically become my nightly routine.

I’ve also read that women with endometriosis may experience symptoms associated with perimenopause earlier than average, and honestly… as if endometriosis hasn’t put us through enough already. 😅

At this point, I’m about ready to start a Late Night Book Club for all the insomnia and perimenopause girlies because apparently none of us are sleeping anyway. 📚☕️😂

Living with an invisible illness can feel incredibly isolating, but having a supportive spouse has made all the difference in my journey. Through countless doctor appointments, unanswered questions, difficult days, and moments when I’ve felt like giving up, my husband has been my biggest advocate, my safe place, and my constant source of strength.

I know not everyone has that kind of support, and my heart truly goes out to anyone navigating chronic illness on their own. No one should have to carry that weight by themselves.

To every caregiver, spouse, partner, family member, or friend who continues to show up with patience, compassion, and love; you matter more than you know. Thank you for making the hard days a little easier. 🤍

No matter what style, brand, or pair of sunglasses I buy, they ALWAYS slide down my nose the second I lay on my stomach. 🤦‍♀️ I’ve tried expensive ones, cheap ones, trendy ones—you name it. Same result every time!

At this point I’m convinced I either have a weirdly shaped face or gravity just has a personal vendetta against me. 😂

It’s honestly one of my biggest pool day pet peeves because I can never stay comfortable long enough to tan my back. So while the front of me is getting plenty of sunshine, the back is staying pale because I’m constantly giving up and rolling back over. ☀️🤣

Apparently they decided to leave me exactly 4 cherry tomatoes and half a cucumber today. How thoughtful. 🤣

But wait until the end because you’ll see the sweetest little baby deer… and honestly, how am I supposed to stay mad after that?! 🥹❤️ They can have all the cherry tomatoes they want.

The only sad part? I haven’t harvested a single heirloom tomato this year because the deer keep eating them before they’re ripe enough to pick. 😅 I guess my garden has officially become a wildlife buffet.

If you’ve been following my chronic illness journe If you’ve been following my chronic illness journey for a while, you already know how many doctors, specialists, tests, and appointments I’ve been through. Time after time, I was told I was “fine,” “everything looks normal,” or that it was “just anxiety.”

But after my appointment with @carolina_functional_neurology, I finally felt heard.

They agreed that what I’ve been experiencing is not normal. They believe I have POTS, and they also think there could be other neurological issues that need to be investigated. After years of questioning myself because of medical gaslighting, hearing a doctor validate my symptoms was something I’ll never forget.

At this point, I don’t think one Netflix documentary would be enough to cover this whole journey. 🤣

The saddest part? I know so many of you have messaged me saying you’ve experienced the exact same thing. It’s heartbreaking how common medical gaslighting has become, especially for people living with chronic illness or invisible illnesses.

So if you’re still searching for answers, this is your reminder: don’t stop advocating for yourself. Keep asking questions. Keep pushing for second opinions. Keep fighting for the care you deserve.

You know your body better than anyone else.

Yesterday felt like a turning point. 🤍 We drove t Yesterday felt like a turning point. 🤍

We drove to Charlotte to see a functional neurologist, and for the first time in a long time, I left an appointment feeling heard instead of dismissed.

After listening to everything I’ve been experiencing and putting me through what they jokingly called the “Brain Olympics” 😂 (seriously…SO many neurological tests), they agreed that my symptoms are not normal. They also agree that I likely have POTS, which honestly brought so much validation after everything I’ve been through.

The testing also showed signs that something may be going on with my cerebellum that’s causing my autonomic nervous system to misfire. Because of that, they want me to get a brain MRI to investigate further, including looking for things like Chiari malformation. They’re also ordering additional bloodwork and testing for celiac disease to make sure nothing else is contributing to everything I’ve been experiencing.

Am I nervous? Absolutely.

But for the first time in a very long time, I also feel hopeful.

I know none of these are answers yet, but having a doctor who believes me, listens, and is committed to figuring this out means more than I can explain. After years of wondering if I was just imagining things or being told my tests were “normal,” that validation alone feels like a huge win.

Thank you to everyone who has checked on me, prayed for me, encouraged me, and shared your own experiences. Your support has helped me keep pushing for answers when it would’ve been easier to give up.

I’m taking this journey one step at a time, and I’ll continue to keep you all updated. ❤️
