Being chronically ill means I’ve tried my fair share of medications over the years, and my body always seems to have a mind of its own. If a medicine is supposed to make people sleepy, I’ll be wide awake all night. If there’s a tiny chance of an adverse reaction, somehow I’m usually that tiny percentage. 😅

So starting a new medication is always a little nerve-wracking for me. Part of me is hopeful it’ll finally provide some relief, and the other part is preparing for whatever random side effect my body decides to throw my way.

Here’s hoping this one actually helps my symptoms without adding a whole new list of problems. 🤞😂

POV: being on surgery recovery leave for a month t POV: being on surgery recovery leave for a month turned me into a full-time homebody 🤣

Honestly, staying home healing after surgery has taught me one thing… I never want to leave my house again 😂 Being cozy at home with my cats, resting, binge watching shows, and avoiding the outside world has been absolutely glorious. I truly understand the “stay at home cat mom” lifestyle now lol.

At this point, I have everything I need right here at home. Peace, comfy clothes, snacks, my pets, and zero social obligations 🤣 Meanwhile, every time I actually leave the house, I come back completely exhausted.

So the fact that I have to go back to work today after a month of recovery is honestly going to be SUCH a rough adjustment 😅 I’m not mentally prepared to rejoin society yet lol. Anyone else secretly love being home way too much?!

Honestly, I’ve been struggling with the thought of Honestly, I’ve been struggling with the thought of going back to work while still recovering from surgery. Between the physical healing and the emotional side of post-surgery recovery, I’ve been feeling pretty down lately. So this comedy date night ended up being exactly what I needed.

We bought tickets to see @johnbcrist months ago, long before I had any idea I’d be spending a month on surgery leave. Turns out the timing couldn’t have been more perfect. This was our third time seeing him live, and he absolutely delivered. I laughed so hard that for a couple of hours, I completely forgot about returning to work, ongoing recovery, and all the stress waiting for me next week. 🤣

Before the show, we had dinner at @redgingerasianbistro and finished the night with dessert at @timesbarandcoffee which made the whole evening even better. Good food, lots of laughs, and quality time with my husband was exactly the distraction I needed.

Sometimes healing isn’t just about physical recovery. Sometimes it’s about finding little moments that remind you how good it feels to laugh again. ❤️

Not me having to put on my sunglasses every time I Not me having to put on my sunglasses every time I have to chop onions because my eyes tear up so bad… 🤣

Ever since I had LASIK surgery a few years ago, chopping onions has been brutal on my eyes. I’m talking instant tears the second I start cutting them 😂 Apparently my eyes became extra sensitive afterward, and honestly it’s been a struggle ever since.

But then I heard about the “wear sunglasses while chopping onions” hack and y’all… why does it actually work?! 😅 So now anytime my hubby isn’t home to take over onion duty, you can catch me in the kitchen wearing sunglasses indoors looking ridiculous but tear-free 😎

Y’all already know I’ve been on a serious freezer Y’all already know I’ve been on a serious freezer meal kick lately since I unfortunately have to go back to work next week 😭 And let me tell you… having a freezer stocked full of easy homemade dinners is about to save me on those busy weeknights!

One of my all-time favorite freezer meals is this homemade chicken pot pie recipe 🥧✨ It definitely takes a little extra work, especially if you make the homemade pie crust from scratch; but trust me, it is SO worth it. The creamy chicken filling, flaky buttery crust, and cozy comfort food vibes make it one of the best dinners ever.

Anytime I make homemade chicken pot pie, I always make two: one for dinner now and one freezer meal for later. And this time, I took my extra frozen chicken pot pie to my sweet mama after her surgery yesterday 💛 It’s honestly the perfect meal to bring someone recovering from surgery, welcoming a new baby, or just going through a hard season because all they have to do is pop it in the oven for an easy homemade comfort meal.

I can’t believe it’s officially been one month sin I can’t believe it’s officially been one month since my endometriosis excision surgery. Honestly, I really thought by now I’d be coming on here saying I finally felt like myself again. I wanted this surgery to be the answer so badly. But the truth is… I’m still struggling every single day.

The lower back pain, hip pain, chronic fatigue, GI issues, insomnia, dizziness, and POTS-like symptoms are all still here. And while my surgeon was absolutely wonderful and removed the endometriosis she found, we’re now starting to realize there may be something more going on underneath it all.

Right now we’re exploring possibilities like EDS, MCAS, and POTS, which honestly feels overwhelming because getting doctors to truly listen and take women seriously can feel like a full time job in itself. I know so many women with chronic illness, endometriosis, and invisible illnesses understand exactly what I mean.

But even though I’m discouraged, I’m not giving up. I know my body, I know something still isn’t right, and I’ll continue advocating for myself until I get answers. Starbucks Pumpkin Spice Latte Copycat Recipe

Y’all know I am obsessed with anything that is a Starbucks Copycat recipe. Given the fact that I have shared several here lately (such as my Caramel Apple Spice Recipe or my Iced Pumpkin Spice Latte Recipe too). But today I thought I would share with you all this yummy Starbucks Pumpkin Spice Latte Copycat Recipe.

And the best news is that it is super easy to make and way cheaper than going to Starbucks. I will have y’all know that I actually haven’t purchased a PSL in store at all this fall! Can you believe it?! I used to drain my money at Starbucks during the fall and holiday seasons. 

But now that I know how to make my own coffee drinks at home, I save a ton of money (and time!). It’s totally worth it! So if you want to learn how to make your own drinks this pumpkin spice season, keep on reading for the full recipe card below! 

Starbucks Pumpkin Spice Latte

Ingredients Needed For Pumpkin Spice Starbucks Recipe:

1 Tablespoon Brown Sugar

1/2 Tablespoon Pumpkin purée, not pumpkin pie filling. You can use a homemade pumpkin puree or just one bought from your local grocery store (which is what I did to make it even easier!).

1/2 teaspoon pumpkin pie spice

1 teaspoon vanilla simple syrup 

1-2 shots of espresso (I will link the Nespresso pods I used below!)

6 oz steamed milk of choice (whole milk, oat milk, coconut milk, almond milk, soy milk, skim milk, you name it- it works just fine in this recipe!)

Whipped Cream (optional)

Cinnamon (optional)

Ingredients Needed For Starbucks PSL

Equipment Needed To Make PSL At Home:

Y’all probably also know how obsessed I am with my espresso machine. I have mentioned it time and time again and I stress the fact that you really need one to make the best coffee drinks at home!

The espresso maker I have is the Nespresso Vertuo. And not only does it brew the perfect espresso shots, it also comes with it’s own milk frother which is a win!

Finished Pumpkin Spice Latte

If you don’t have an espresso machine, you can just use 3-4 oz of dark roast coffee instead for this recipe. Although, I highly recommend getting one if you’re serious about at homemade lattes!

Another thing I love to have on hand for a homemade version of a Starbucks classic, is flavored syrups. You probably remember me mentioning Jordan’s Skinny Syrups before too. They are my go-to for a good at home coffee recipe.

Plus, I love the fact that they have no calories and no grams of sugar to them. That way, you can enjoy your own Starbucks pumpkin spice latte without all the extra mess they add into it. 

Starbucks Pumpkin Spice Latte Recipe

​Make The Pumpkin Spice Latte

The first step in making this yummy latte is to make the homemade pumpkin spice syrup recipe. Which is super easy to do! All you need to do is combine the brown sugar, pumpkin puree, pumpkin pie spice, and vanilla syrup together. Make sure there are no lumps and that everything is blended well. 

Homemade Pumpkin Syrup

Add this homemade pumpkin syrup into your brewed shot of espresso. I actually did two shots of espresso for this recipe because I like a strong coffee! Then, you want to add in your hot milk. I just used regular milk for this recipe and it turned out amazing.

And like I mentioned above, my Nespresso came with a milk frother, so I used this to not only heat up my milk, but to froth it as well.

If you don’t have a frother like this, you can easily heat up your milk in a small saucepan on the stove instead. Top with whipped cream and a dash of cinnamon and you are good to go! If you want to be extra fancy, you can top it with some cinnamon sticks too!

As you can see, this easy recipe is filled with simple ingredients that pack a ton of pumpkin flavor! It is the perfect drink for this time of year! I love a good homemade pumpkin spice latte recipe since you are in control of the ingredients.

​The original pumpkin spice latte from Starbucks just has way too many calories and other questionable ingredients in it for me to enjoy. I feel much better making my own and it still has all the comforting flavors as the original one too!

Ingredients
  

  • 1 tbsp brown sugar
  • 1/2 tbsp brown sugar
  • 1/2 tsp pumpkin pie spice
  • 1 tsp vanilla syrup
  • 1-2 shots of espresso
  • 6 oz hot milk of choice
  • whipped cream optional
  • cinnamon optional

Instructions
 

  • Mix together the brown sugar, pumpkin puree, pumpkin pie spice and vanilla syrup. Make sure there are no lumps and that it is mixed together thoroughly.
  • Add pumpkin syrup mixture to brewed espresso. I used two shots of espresso for this recipe. If you don't have an espresso maker, use 4-6 oz of a dark roast coffee instead.
  • Heat up your milk and add it to the latte. I used my milk frother that both heats it and froths it up. You could also heat the milk up in a saucepan as well if you don't have a frother.
  • Top latte with whipped cream and a sprinkle of cinnamon and enjoy it!!

    Oh my gosh, YES! I didn’t even know I needed this in my life, but I’m so excited to try and make my own copycat PSL at home. I don’t know where I can get pumpkin puree in the UK so I might have to make my own, but it’ll still be a lot cheaper than Starbies!

    I really love everything related to pumpkin. And autumn is my favorite time of the year partly even because of this!!! I can’t live without pumpkin, it’s very tasty and I associate it with autumn. I also love coffee and I already drank latte with pumpkin puree when I was in one of the coffee shops in Europe. But I think it is time for me to make pumpkin puree myself and make this latte at home. I love making coffee at home and I think the time has finally come! Thank you for reminding me of this idea!

I laughed so hard that for a couple of hours, I completely forgot about returning to work, ongoing recovery, and all the stress waiting for me next week. 🤣

Before the show, we had dinner at @redgingerasianbistro and finished the night with dessert at @timesbarandcoffee which made the whole evening even better. Good food, lots of laughs, and quality time with my husband was exactly the distraction I needed.

Ever since I had LASIK surgery a few years ago, chopping onions has been brutal on my eyes. I’m talking instant tears the second I start cutting them 😂 Apparently my eyes became extra sensitive afterward, and honestly it’s been a struggle ever since.

But then I heard about the “wear sunglasses while chopping onions” hack and y’all… why does it actually work?! 😅 So now anytime my hubby isn’t home to take over onion duty, you can catch me in the kitchen wearing sunglasses indoors looking ridiculous but tear-free 😎

I can’t believe it’s officially been one month sin I can’t believe it’s officially been one month since my endometriosis excision surgery. Honestly, I really thought by now I’d be coming on here saying I finally felt like myself again. I wanted this surgery to be the answer so badly. But the truth is… I’m still struggling every single day.

The lower back pain, hip pain, chronic fatigue, GI issues, insomnia, dizziness, and POTS-like symptoms are all still here. And while my surgeon was absolutely wonderful and removed the endometriosis she found, we’re now starting to realize there may be something more going on underneath it all.

Right now we’re exploring possibilities like EDS, MCAS, and POTS, which honestly feels overwhelming because getting doctors to truly listen and take women seriously can feel like a full time job in itself. I know so many women with chronic illness, endometriosis, and invisible illnesses understand exactly what I mean.

But even though I’m discouraged, I’m not giving up. I know my body, I know something still isn’t right, and I’ll continue advocating for myself until I get answers.
