POV: being on surgery recovery leave for a month t POV: being on surgery recovery leave for a month turned me into a full-time homebody 🤣

Honestly, staying home healing after surgery has taught me one thing… I never want to leave my house again 😂 Being cozy at home with my cats, resting, binge watching shows, and avoiding the outside world has been absolutely glorious. I truly understand the “stay at home cat mom” lifestyle now lol.

At this point, I have everything I need right here at home. Peace, comfy clothes, snacks, my pets, and zero social obligations 🤣 Meanwhile, every time I actually leave the house, I come back completely exhausted.

So the fact that I have to go back to work today after a month of recovery is honestly going to be SUCH a rough adjustment 😅 I’m not mentally prepared to rejoin society yet lol. Anyone else secretly love being home way too much?!

Between the physical healing and the emotional side of post-surgery recovery, I’ve been feeling pretty down lately. So this comedy date night ended up being exactly what I needed.

Ever since I had LASIK surgery a few years ago, chopping onions has been brutal on my eyes. I’m talking instant tears the second I start cutting them 😂 Apparently my eyes became extra sensitive afterward, and honestly it’s been a struggle ever since.

But then I heard about the “wear sunglasses while chopping onions” hack and y’all… why does it actually work?! 😅 So now anytime my hubby isn’t home to take over onion duty, you can catch me in the kitchen wearing sunglasses indoors looking ridiculous but tear-free 😎

If you’ve ever wondered how to stop crying while cutting onions, consider this your sign to try the sunglasses trick! It may look silly, but it seriously helps block those onion fumes from hitting your eyes 👏

I can’t believe it’s officially been one month sin I can’t believe it’s officially been one month since my endometriosis excision surgery. Honestly, I really thought by now I’d be coming on here saying I finally felt like myself again. I wanted this surgery to be the answer so badly. But the truth is… I’m still struggling every single day.

The lower back pain, hip pain, chronic fatigue, GI issues, insomnia, dizziness, and POTS-like symptoms are all still here. And while my surgeon was absolutely wonderful and removed the endometriosis she found, we’re now starting to realize there may be something more going on underneath it all.

Right now we’re exploring possibilities like EDS, MCAS, and POTS, which honestly feels overwhelming because getting doctors to truly listen and take women seriously can feel like a full time job in itself. I know so many women with chronic illness, endometriosis, and invisible illnesses understand exactly what I mean.

But even though I’m discouraged, I’m not giving up. I know my body, I know something still isn’t right, and I’ll continue advocating for myself until I get answers. Copycat Starbucks Iced Pumpkin Spice Latte Recipe

Jump to Recipe Print Recipe

I am your basic white girl and I am obsessed with any Starbucks pumpkin spice drinks. But, I don’t love the price tag that comes with that! We all know going to Starbuck multiple times a week can put a dent in your wallet! So I decided to try out my own copycat Starbucks iced pumpkin spice latte recipe at home!

I do love a hot pumpkin spice latte too, but it still is a little warm here. So to celebrate the start of September, I thought it would be fun to shared this yummy iced pumpkin spice latte recipe!

I hope you all try it out too and enjoy it just as much as I did. It tastes like fall in a cup! And it also pairs so well with the healthy 4 ingredient pumpkin cookies I shared earlier this week too! Pumpkin coffee and a pumpkin dessert?! Yes please! Sign me up! Keep on scrolling for the recipe card at the bottom of this post!

Ingredients For Copycat Starbucks Iced Pumpkin Spice Latte Recipe

Here are all the simple ingredients you need to make this yummy homemade pumpkin spice latte:

2 shots of espresso (if you don’t have an espresso machine, you can just use 1/2 cup of a really strong brewed coffee instead)

1 cup of your favorite milk (oat milk, coconut milk, soy milk, non-dairy milk, skim milk etc.)

1 tablespoon pumpkin purée, not pumpkin pie filling

1/4 teaspoon pumpkin pie spice

1/4 teaspoon vanilla extract (I used my homemade vanilla extract here!)

2 teaspoons maple syrup

Ice Cubes

Whipped Cream, optional

Equipment Needed For Making Iced Latte

To make this delicious drink, you do need a couple pieces of equipment to make it properly. I used my Nespresso Vertuo machine, which I absolutely love! but, you can use a regular coffee maker or a french press too if you don’t have one.

If you are using a regular coffee maker, just be sure that you are brewing really strong coffee. Otherwise, brew a shot of espresso with your Nespresso or espresso machine. I just brewed a whole pod with my Nespresso machine and used that for this recipe.

Brewing Espresso

But, if you want it to be more sweet and less strong, you don’t have to use as much espresso as I did. I just like a strong cup of coffee!

Another piece of equipment you need is a blender (I used my Ninja Blender) or an immersion blender. You combine all the ingredients, except the ice cubes and whipped cream in a blender. Then, serve over ice in a tall glass and add whipped cream if you are using it. And then, top with an extra sprinkle of pumpkin pie spice or cinnamon.

Before Blending
Before blending it altogether.

And, that’s literally all there is to creating this Starbucks copycat recipe! How is easy is that?

I also love how this iced PSL recipe has a much lower calorie count than the actual Starbucks pumpkin spice latte one too! I hate how many calories most of their drinks have honestly. And if you’re looking for another lower calorie option to a Starbucks Coffee favorite, be sure to check out my copycat peppermint mocha recipe too!

Blending Pumpkin Spice Coffee

Recipe Notes

You can easily customize this delicious homemade iced pumpkin spice latte to your preferences. Like I mentioned above, you can use whatever choice of milk you prefer. I have tried several different kinds of milk when it comes to coffee at home recipes.

Tall Glass Full of Ice Cubes
Pouring Coffee Over Ice

I usually have cow’s milk on hand, but I have found that unsweetened almond milk also works well for iced coffee recipes. Honestly, I am not a fan of it though in hot coffee recipes. So it would be perfect to use in this recipe since it is iced! Also, I think whole milk works best in a milk frother. It definitely froths up better than other milk I have tried.

Adding Whipped Cream To Coffee
Sprinkling Pumpkin Pie Spice on Coffee

If you want a sweeter coffee, add more maple syrup. Or add in a different kind of sweetener. I like using maple syrup because it cuts back on actually adding in sugar. But, if you prefer sugar instead, go for it!

So basically just play around with this recipe and see what works best for you.

Enjoy Your Iced Pumpkin Latte

It’s that time of the year where everything has a pumpkin flavor, and if you’re obsessed like I am, then I know you will enjoy this recipe! Live it up this pumpkin spice season and try out this delicious coffee recipe!

I promise you, this drink has all the flavors of fall in one sip! If you try out this pumpkin spice latte copycat recipe, then let me know below! Tell me how you like it or what you did differently to it as well!

And my little garden is definitely thankful too 🌱 Nothing makes me happier lately than sitting in the rocking chairs on the porch, listening to the rain come down, and pretending I’m a little old lady already 😂

Slow mornings, fresh rain, growing gardens, and hot coffee… that’s basically my ideal summer morning at this point 🤍

Anyone else turn into a porch-sitting grandma the second it rains? 🤣🌧️ #porchsitting #porchsittin #rainymorning #cozymorning #rainymood
