I have been making this Heath bar cookie recipe for as long as I can remember. And my mom started it off by always making it when I was growing up too. This cookie is not only perfect for Christmas, but for New Years, and anytime in between too.
This delicious, chewy cookie also has made my list of my top 5 cookie recipes that I bake every year too. So I figured it deserved its very own post and spotlight. Especially since I plan on making some for New Year’s Eve too! They are my favorite cookies for a good New Years Eve party!

What Is Heath Bar Cookies Made Of?
These delicious heath bar cookies are made from your basic cookie dough ingredients (I will list them all below). However, the special ingredient to these are the crunchy toffee bits you get from Heath bars.
Also, if you can’t find Heath bars, a Skor bar will work just fine as well. Either one of those will give you that perfect toffee flavor you are looking for in these yummy cookies!
- ½ cup butter softened to room temperature
- ¾ cup sugar
- ¼ cup dark brown sugar
- 1 egg
- 1 teaspoon vanilla extract (I used my homemade vanilla extract recipe for this)
- 2 cups all purpose flour
- 1 teaspoon baking powder
- ½ teaspoons baking soda
- 1 cup Heath bar bits (you could also chop up some regular-size heath bars if you can’t find the heath bits)
How To Make Heath Bar Cookies
The first thing you need to do is preheat your oven to 350 degrees. Then, you need to line a cookie sheet with some parchment paper or a silicone mat. I, however, use my amazing Caraway Home baking pans and they don’t cause cookies to stick on them at all.
Then, cream the butters and sugars together on medium speed for about 2-3 minutes using an electric mixer. Using a rubber spatula, push down the butter mixture as needed. Add in the egg and the vanilla extract and continue beating for another 2-3 minutes as well.
Sift together the baking powder, baking soda, and flour in a separate bowl. Add the dry ingredients into the wet ingredients and mix until just combined.
Then, add in the Heath toffee bits and mix again until everything is fully combined. If you wanted your cookies to also have a chocolate flavor to go along with the toffee, you could also add in chocolate chips or chocolate chunks here as well.
The best part of this recipe is that you don’t have to chill cookie dough either! So you can make and bake right away! Scoop the cookie mixture using a cookie scoop onto prepared baking sheet. If you don’t have a cookie scoop, just make cookie dough balls and place the cookie balls 2-3 inches apart on cookie sheet.
Bake for 10-12 minutes in preheated oven, or until cookies become golden brown. Let cookies sit on cookie sheets for 5 minutes before removing them and placing them on wire rack. To store, place leftover cookies in airtight container for up to 5 days.

Ingredients

Instructions
- Preheat your oven to 350℉.
- Cream together the softened butter and sugars with an electric mixer for about 2-3 minutes.
- Add the egg and the vanilla and mix again for another 2-3 minutes.
- Sift the flour, baking powder, and baking soda together in a medium bowl. Add the dry ingredients to the wet ingredients and mix well.
- Fold in the Heath baking bits.
- Scoop 2 tablespoons of dough into a ball and place them 2-3 inches apart on a baking sheet.
- Bake for 10-12 minutes and let cookies cool on baking sheet for 5 minutes before moving them to a wire rack to cool completely. Enjoy!
