You won’t believe how simple and easy they are to make. And the pink color is the perfect accent for the holiday of love, don’t you think?! This recipe makes for delicious, soft cookies with the perfect texture!
And, I am going to let you in on a little secret. The main reason these cookies are so easy is because they are made from a box of cake mix! Aside from that, you don’t need many more ingredients! These are technically more strawberry cookies as they are made from a strawberry cake mix.
But, you could also do a French vanilla cake mix instead and just add drops of pink food coloring to it. That way you still can achieve a bright pink color for these fun holiday cookies! Whatever you decide to do, keep on reading for this easy and fun pink cookie recipe below!

Ingredients Needed for Pink Cookies
Like I mentioned above, the ingredients are super minimal and do not require much at all!
- Box of Strawberry Cake Mix
- 6 Tablespoons Butter
- 2 Eggs
- 1 Cup Powdered Sugar
- 1 Teaspoon Cornstarch
How To Make Strawberry Cake Mix Cookies
Preheat oven to 375 degrees. Start by melting the butter in a microwave safe dish. For best results, set aside to cool to room temperature. Then, in a large bowl, combine the cup of powdered sugar and the teaspoon of cornstarch together. Set the mixture of dry ingredients aside as you make your cookie dough.
In the bowl of a stand mixer, combine the cooled, melted butter, 2 eggs and strawberry cake mix together using the paddle attachment. Be sure to scrape down the sides of the bowl and continue mixing at low speed until everything is throughly combined. The mixture will be sticky as this dough makes for some thick cookies!
Once fully mixed, spoon balls of dough into the powdered sugar mixture. Roll the ball of dough around until throughly coated. Place on a prepared baking sheet. I love to use my Caraway Home Baking Pans for cookies.

Be sure to place the cookie dough balls about 2 inches from each other on the cookie sheets. These cookies spread slightly when baking. Then, place the cookies in a preheated oven for 10-12 minutes. I baked mine for a total of 10 minutes total.

After baking, let cookies cool on a wire rack for 10 minutes. You will notice right after they come out of the oven, they are very puffy, but they will settle down as cooling.
To store leftover pink cookies, place in an airtight container for up to 3 days. But, I doubt they will even last you that long because they are so good!
You may think this recipe card looks familiar because I do the same kind of recipe when making Grinch Cookies at Christmastime! Except I use a French vanilla box cake mix and add green food coloring to it instead! I’ve also used red food coloring before to make them look more Christmas like as well. You could really make these cookies in many different colors!
These really are the best cookies to make with the most simple ingredients! If you’re on a time crunch, these are perfect to make since they require little time.

Ingredients
- 1 box strawberry cake mix
- 6 tbsp butter melted
- 2 large eggs
- 1 cup powdered sugar
- 1 tsp cornstarch
Instructions
- Preheat oven to 375 degrees.

- Mix together the cup of powdered sugar and 1 teaspoon of cornstarch in a large bowl and set aside.
- Then, mix together the box cake mix, 2 eggs, and cooled, melted butter in the bowl of a stand mixer. Be sure to scrape the mixture down from the side of the bowl.
- Spoon balls of cookie dough into the powdered sugar mixture and roll around until evenly coated.
- Place 2 inches apart on cookie sheet and then place into preheated oven for 10-12 minutes. I did just 10 minutes.
- Let cool on a wire rack for another 10 minutes and enjoy!
