And they are the perfect vibrant green color to go along with the holiday. Don’t worry if you don’t have any green to wear, you will have plenty of green to eat with this recipe! And it’s much better than the traditional greens, like spinach, for that matter!
This recipe is also super easy and simple to make! So it doesn’t get much better than this! We don’t do too much to celebrate this holiday, however, I am all about squeezing in a holiday themed brownie recipe whenever I can! And I know you all feel the same!

Ingredients Needed For St Patrick’s Day Brownies
For the brownies:
- ¾ cup semi-sweet chocolate chips
- ¾ cup butter
- 2 cups sugar
- 4 large eggs
- 1½ cups all-purpose flour
- 1 (1-oz) bottle green liquid food coloring
- 1½ tsp baking powder
- 1 tsp vanilla (I used my homemade vanilla extract for this of course!)
- 1/8 tsp salt
For the cream cheese frosting (which is entirely optional, but super delicious as well!):
- 8 oz cream cheese softened to room temperature
- 3 tbsp butter softened to room temperature
- 1 1/2 cups powdered sugar
- 1/8 tsp salt
- 1 tsp vanilla extract
- green sprinkles optional
Recipe Notes
Like I mentioned above, this recipe is super simple. And as long as you follow the instructions below, you should have no problem making them. However, the recipe I was inspired from, mentioned to use a 9 inch square pan to bake the brownies in.
But, I only had an 8 inch square pan. So I thought it would be okay just to use that instead. Unfortunately I was wrong. The pan was a little too small so I had brownie overflowing from the top of it. Thank goodness I put a baking sheet down under it to catch any spillage!
Otherwise that would have been a mess to clean up in my oven! So because of this, I had to bake them about 10 minutes longer than the usual 44-48 minutes.
When I took them out at that time, they were still very doughy in the middle. And while they ended up tasting delicious, but they didn’t look very pretty because they didn’t bake even. So definitely use a bigger square pan! I learned my lesson for sure!
Looks like I will need to order some more baking dishes from my favorite company, Caraway Home! Y’all have seen me mention them before because they have the best baking sheets I’ve ever used. So now I’ll need to use my coupon code “MORNINGS_ON_MACEDONIA10 ” and shop for a bigger square baking pan!
Also, be sure to use the WHOLE bottle of green food coloring. I know it may seem like a lot, but if you want them to look green, you definitely need that much. My bottle I used was 1.2 oz total. So you really need at least a 1 oz bottle to achieve the green results like I had!

Other than that minor snafu I mentioned above, these brownies turned out to be so tasty! And they are perfect for the holiday since they have the vibrant green color!

St Patrick’s Day Brownies
Ingredients
For the brownies:
- 3/4 cup semi-sweet chocolate chips
- 3/4 cup butter
- 2 cups sugar
- 4 eggs
- 1 1/2 all-purpose flour
- 1 oz bottle of green liquid food coloring
- 1 1/2 tsp baking powder
- 1 tsp vanilla
- 1/8 tsp salt
For cream cheese frosting:
- 8 oz cream cheese softened to room temperature
- 3 tbsp butter softened to room temperature
- 1 1/2 cups powdered sugar
- 1/8 tsp salt
- 1 tsp vanilla extract
- green sprinkles optional
Instructions
For the brownies:
- Preheat your oven to 350 degrees. Line the bottom of a 9 inch square pan with aluminum foil, and then lightly grease as well.
- Microwave chocolate chips and butter together until melted together. About 90 seconds, stirring every 30 seconds.
- Whisk in the sugar and then add in the eggs, one at a time. Blend after each addition and then gently stir in the flour, baking powder, vanilla extract, salt, and the green food coloring.
- Pour the mixture into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted in the middle of the brownies comes out clean.
- Cool brownies on wire rack completely, about 2 hours, before frosting them.
For the cream cheese frosting:
- Beat cream cheese and butter together at medium speed until creamy. Add in powdered sugar, salt, and vanilla and mix until combined.
- Spread cream cheese frosting on top of cooled brownies and cut into 16 squares.
- Top with St Patrick's Day themed sprinkles and enjoy!

Yummm, these sounds delicious! Although I would probably leave the green colouring out, I had an unfortunate evening recently when my dinner consisted of a lot of spinach and a drink (+ many) was taken, the evening ended in the toilet and I’m gonna stay off spinach for a bit🙈 Without the spinach-resembling colour these are definitely going on my Spring baking list!
