Since Thanksgiving is coming up, it’s time to start thinking about what casseroles and side dishes and desserts you need to make for all of your family gatherings! One of my favorite recipes is this homemade broccoli casserole that my mom and my Meme have been making for years!
I love recipes that have been handed down from one generation to another! Not only is it delicious, but so easy to prepare and everyone will love it!

- Fresh broccoli
- 2 eggs
- 1 can cream of mushroom soup
- 1 small onion
- 1/2 cup of shredded cheddar cheese
- 1/4 cup of mayonnaise
- Ritz crackers
- 1/2 cup (1 stick) of butter, melted
So first thing you need to do is cook the broccoli for about 20 minutes on medium heat, or just until tender.
While the broccoli is cooking, now is a good time to crush up the Ritz crackers.
I usually just place about 2 sleeves of crackers in a freezer bag and then crush them into tiny pieces with a rolling pin.
Once broccoli is done cooking, mix broccoli with 1 can cream of mushroom soup, 2 eggs, 1 chopped onion, 1/2 cup of shredded cheddar cheese, and 1/4 cup of mayonnaise.
Then place mixture in casserole dish and arrange crushed crackers on top. Next, pour the melted stick of butter all over the crushed crackers.
Bake at 375 for about 30 minutes or until the cracker crumbs start to brown. Let cool for 10 minutes and then enjoy!

Homemade Broccoli Casserole
Ingredients
- 1 bunch fresh broccoli

Hi Charity. I love broccoli so this dish sounds delicious! It also looks relatively straightforward to prepare so I might even give it a go myself rather than deferring to my wife (who is a far, far better cook than I am). Oh, and a quick question, if I may – I assume from the context that Meme is a synonym for grandmother. Is that right? (Not a term I’ve come across before in that context)

Yes! Meme is my grandmother! Usually, it’s spelled as “Mimi” but we always did it as “Meme” so it’s a little different. And yes, this recipe is so super easy and simple. But also delicious! You should definitely try it out sometime!
