Time after time, I was told I was “fine,” “everything looks normal,” or that it was “just anxiety.”

But after my appointment with @carolina_functional_neurology, I finally felt heard.

They agreed that what I’ve been experiencing is not normal. They believe I have POTS, and they also think there could be other neurological issues that need to be investigated. After years of questioning myself because of medical gaslighting, hearing a doctor validate my symptoms was something I’ll never forget.

At this point, I don’t think one Netflix documentary would be enough to cover this whole journey. 🤣

The saddest part? I know so many of you have messaged me saying you’ve experienced the exact same thing. It’s heartbreaking how common medical gaslighting has become, especially for people living with chronic illness or invisible illnesses.

So if you’re still searching for answers, this is your reminder: don’t stop advocating for yourself. Keep asking questions. Keep pushing for second opinions. Keep fighting for the care you deserve.

You know your body better than anyone else.

Yesterday felt like a turning point. 🤍 We drove t Yesterday felt like a turning point. 🤍

We drove to Charlotte to see a functional neurologist, and for the first time in a long time, I left an appointment feeling heard instead of dismissed.

After listening to everything I’ve been experiencing and putting me through what they jokingly called the “Brain Olympics” 😂 (seriously…SO many neurological tests), they agreed that my symptoms are not normal. They also agree that I likely have POTS, which honestly brought so much validation after everything I’ve been through.

The testing also showed signs that something may be going on with my cerebellum that’s causing my autonomic nervous system to misfire. Because of that, they want me to get a brain MRI to investigate further, including looking for things like Chiari malformation. They’re also ordering additional bloodwork and testing for celiac disease to make sure nothing else is contributing to everything I’ve been experiencing.

Am I nervous? Absolutely.

But for the first time in a very long time, I also feel hopeful.

I know none of these are answers yet, but having a doctor who believes me, listens, and is committed to figuring this out means more than I can explain. After years of wondering if I was just imagining things or being told my tests were “normal,” that validation alone feels like a huge win.

Thank you to everyone who has checked on me, prayed for me, encouraged me, and shared your own experiences. Your support has helped me keep pushing for answers when it would’ve been easier to give up.

I’m taking this journey one step at a time, and I’ll continue to keep you all updated. ❤️

I hope y’all had the best Fourth of July! ❤️🤍💙 We had the sweetest, low-key Independence Day celebrating at home, and honestly… it was one of my favorite holidays yet.

Starbucks Caramel Apple Spice Recipe

Y’all know I am all about making the best Starbucks copycat recipe that I can! I have shared several in the past such as my copycat peppermint mocha recipe or more recently, the copycat iced pumpkin spice latte recipe! So today I am going to share with you all my copycat Starbucks caramel apple spice recipe.

Have you guys ever tried the caramel apple spice Starbucks drink before?! If so, you know it really is like fall in a cup! And the best part is, literally anyone can love it because it doesn’t even have coffee in it. So if you’re not a huge coffee drinker, you definitely need to try this recipe out.

You can either swing by your local Starbucks to try it out, or make this delicious drink yourself at home! I am always opting to make drinks at home and not have to go out and spend money! You will definitely fall in love with this yummy caramel apple spice drink.

Not only is it festive and delicious, but the caramel drizzle on top is to die for! Perfect to sip on during a cold day in the fall! Be sure to get the full recipe card at the bottom of this post to make this favorite fall drink of mine too!

Caramel Apple Spice Copycat Recipe

Ingredients Needed For Caramel Apple Spice

2 cups apple cider or apple juice (I used a sweet cider with cinnamon for this)

2 tablespoons of cinnamon dolce syrup (recipe is shared below for that!)

2 tablespoons caramel syrup or sauce

​Whipped Cream, totally optional but highly recommended! 

​For The Cinnamon Dolce Syrup:

1/2 cup of water

1/4 cup brown sugar

2 tablespoons granulated sugar

1/2 teaspoon ground cinnamon 

2 teaspoons vanilla extract (I used my homemade vanilla extract for this as well!)

What’s In The Apple Spice From Starbucks?

As I mentioned above, the caramel apple spice is a non-coffee drink from Starbucks. Starbucks itself actually uses apple juice for their recipe. But, I like apple cider even better in place of the juice. They also add a cinnamon-sugar syrup (which is the copycat Starbucks cinnamon dolce syrup we are making here), and a caramel sauce. 

Starbucks also tops of their caramel apple spice with some whipped cream and even more caramel sauce on top! Which is totally not necessary, but absolutely delicious and makes this hot caramel apple cider even more tasty!

Is The Caramel Apple Spice Available Year Round?

​You may think this yummy hot apple cider drink is one of Starbucks seasonal drinks. And not only is it available during the fall season, but year round as well. And if you learn how to make it at home too, you can have it year round and whenever you want to as well! 

Making The Cinnamon Dolce Syrup

The first part in making this delicious hot drink is to just make the cinnamon dolce syrup first. Just combine the water and the sugars and bring to a soft boil. You want the sugar to melt completely, and be sure to continue stirring during this process.

Then, add in your cinnamon and vanilla extract. Continue cooking for about 3-5 more minutes, or until it reaches more of a syrupy consistency. Pour syrup into an airtight container and let cool. Once cool, place in the fridge until ready to use. This syrup contains super simple ingredients and is so easy to make. You can easily make this syrup for other tasty coffee drinks too! 

Making The Caramel Apple Spice

Make The Starbucks Caramel Apple Spice

Now, all you need to do is actually make the caramel apple spice drink itself! In a saucepan over medium heat, pour your cold apple juice or apple cider in. Then, add in the cinnamon dolce syrup and caramel sauce. Cook for about 1-2 minutes, or until everything is warmed up and combined thoroughly.

Pour into two cups and add some whipped cream with a drizzle of caramel sauce on top! I also sprinkled some cinnamon on top as well, but you could even add in some whole cinnamon sticks too. That would make it even more festive!

What Caramel Sauce Should I Use?

You could definitely make your own homemade caramel sauce, but I recommend using Torani’s Caramel Sauce if you’re looking for a store bought version too. It is in a convenient squeeze bottle which makes applying the caramel on top super easy.

Plus, it cuts back on the cooking time for the caramel apple spice recipe too. You don’t have to dirty up another pan to make another sauce!

Ingredients
  

For The Caramel Apple Spice:

  • 2 cups apple cider or apple juice I used apple cider
  • 2 tbsp cinnamon dolce syrup
  • 2 tbsp caramel sauce
  • whipped cream and cinnamon for serving

For The Cinnamon Dolce Syrup:

  • 1/2 cup water
  • 1/4 cup brown sugar
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon
  • 2 tsp vanilla extract

Instructions
 

  • First, make the cinnamon dolce syrup. Combine the water and the sugars in a saucepan over medium heat, stirring continuously until all the sugar melts. Then add in your cinnamon and vanilla. Bring to a boil and let it simmer for 3-5 minutes, or until it reaches a syrupy consistency.
  • Remove from heat and store cinnamon dolce syrup in fridge until ready to use.
  • Now, make to make the caramel apple spice, combine apple cider, caramel sauce and cinnamon dolce sauce in a saucepan over medium heat. Combine well and continue to heat until mixture is heated all the way through, about 1-2 minutes.
  • Remove from heat and pour into glass. Top with whipped cream, a sprinkle of cinnamon, and some extra caramel sauce if desired. Enjoy!

I’ve decided to start an OnlyPaws account so I can finally quit my job and become a full-time stay-at-home cat mom. 😹

I mean, who wouldn’t pay premium content prices to see adorable cat toe beans, fluffy paws, and exclusive behind-the-scenes footage of two spoiled indoor cats living their best lives? 🐾😂

The stars of this business venture, Toby and Riley, have fully consented to the arrangement (by accepting treats), and they strongly support me staying home so I can dedicate more time to serving their every need. 😜

Honestly, with content this cute, retirement might be closer than I thought. 🤣

Yesterday felt like a turning point. 🤍 We drove t Yesterday felt like a turning point. 🤍

We drove to Charlotte to see a functional neurologist, and for the first time in a long time, I left an appointment feeling heard instead of dismissed.

After listening to everything I’ve been experiencing and putting me through what they jokingly called the “Brain Olympics” 😂 (seriously…SO many neurological tests), they agreed that my symptoms are not normal. They also agree that I likely have POTS, which honestly brought so much validation after everything I’ve been through.

The testing also showed signs that something may be going on with my cerebellum that’s causing my autonomic nervous system to misfire. Because of that, they want me to get a brain MRI to investigate further, including looking for things like Chiari malformation. They’re also ordering additional bloodwork and testing for celiac disease to make sure nothing else is contributing to everything I’ve been experiencing.

Am I nervous? Absolutely.

But for the first time in a very long time, I also feel hopeful.

I know none of these are answers yet, but having a doctor who believes me, listens, and is committed to figuring this out means more than I can explain. After years of wondering if I was just imagining things or being told my tests were “normal,” that validation alone feels like a huge win.

Thank you to everyone who has checked on me, prayed for me, encouraged me, and shared your own experiences. Your support has helped me keep pushing for answers when it would’ve been easier to give up.

I’m taking this journey one step at a time, and I’ll continue to keep you all updated. ❤️

I hope y’all had the best Fourth of July! ❤️🤍💙 We had the sweetest, low-key Independence Day celebrating at home, and honestly… it was one of my favorite holidays yet.

We spent the afternoon relaxing by the pool, then my hubby smoked his famous ribeyes for a delicious family dinner. 🥩(comment “Recipe” below if you want me to send it your way! 😉) After that, we hopped on the golf cart and drove around until we found the perfect spot to watch the Fourth of July fireworks near our house. 🎆

Getting to enjoy an incredible meal, beautiful fireworks, and all the patriotic fun without fighting the big crowds? I’d call that a total win! 🙌🏻 There’s just something so special about simple summer nights spent with the people you love.

It looks like it’s going to be a beautiful (and VERY hot 🥵) Fourth of July, but I wouldn’t have it any other way. This year we’re keeping things simple with a low-key Independence Day celebration at home, and honestly… it’s exactly what we needed.

We’ll be spending the day relaxing by the pool before my hubby fires up the smoker for his famous ribeyes. Nothing beats a classic 4th of July cookout with good food, sunshine, and the people you love. 🇺🇸🥩☀️

As much as we love traveling for the holiday, sometimes staying home reminds you that the simple moments are the best ones.
