I know Valentines Day has come and gone, but I just had to share this cookie cake I made with you all! My hubby requested one, and I have actually never made one before. So I figured if youĀ were in the same boat as me, I could share all the valentines cookie cake ideas with you all.
That way, we are all more prepared for next year’s holiday too! And, you can make this chocolate chip cookie cake anytime of the year really. Just switch out the Valentines Day sprinkles with some different ones, and change the icing color up!
You could make this for really any special occasions you have coming up and customize it. Which is a perfect way to celebrate in my opinion!

āIngredients Needed For Valentines Cookie Cake:
- Ā¾ cup butter room temperature
- Ā¾ cup brown sugar
- ā cup sugar
- 2 teaspoons vanilla (I use my homemade vanilla extract for this)
- 1 egg
- 1 egg yolk
- 2 cups flour
- 2 teaspoons cornstarch
- Ā½ teaspoon baking powder
- Ā¾ teaspoon salt
- 1 cup semisweet chocolate chips (you could also use white chocolate chips or dark chocolate chips if you prefer)
- 2 Tablespoons Valentineās sprinkles

Ingredients Needed For Vanilla Buttercream:
- 3/4 cup butter room temperature
- 2 cups powdered sugar
- 2 teaspoons vanilla
- 1/4 teaspoon salt
- 1-2 Tablespoons milk or cream
- Red food coloring, optional

What Pan Should I Use?
To make this Valentine’s Day Cookie Cake, you can use a springform pan, which is what I did. If you want a heart-shaped cookie cake, you could also use a heart-shaped pan.
But, keep in mind, bake times will vary based on whether or not you are making a heart cookie cake or a regular, round cookie cake.
To keep my cake from sticking to the cake pan, I used parchment paper for the bottom area of the round pan.
Then, I also sprayed non-stick cooking spray all over the sides of the pan too. When baking, I also placed this springform pan on a cookie sheet too, just in case anything leaked out. I didn’t want it to get all over the bottom of my oven!
How To Make Cookie Cake
To make this yummy Valentines Day cookie cake, preheat your oven to 350 degrees. Line whatever pan you are using with parchment paper or spray with cooking spray throughly.
In a large bowl, sift together the flour, cornstarch, baking powder, and salt and set aside. In the bowl of an electric mixer, cream both sugars, butter, and vanilla extract on medium speed until light and fluffy, about 3 minutes total.

Add the egg and the yolk and mix well. Slowly add the dry ingredients into the wet ingredients at low speed. Add in the chocolate chips and the sprinkles.
Press cookie dough into prepared pan and try to make it as even as possible. Bake anywhere from 30-45 minutes, or until the edges turn a nice golden brown color.

As I mentioned above, baking time will vary based on what pan you use. Mine took a total of about 42 minutes. Remove from oven and cool completely on wire rack. When cool, remove cookie cake from pan and place on cake board or large platter.

How To Decorate Valentine Cookie Cake
To decorate the cookie cake, I made a yummy vanilla buttercream. To do so, I beat the butter in the bowl of a stand mixer for about 3 minutes.

Then, I added in half the powdered sugar and continue to beat until evaporated into the butter. Add in the remaining powdered sugar, salt, and vanilla. Then, add one tablespoon of milk or cream in at a time, until mixture is light and fluffy.

I used 2 tablespoons of heavy cream. Also, if you are using the red food coloring, add it in now until you achieve a light pretty pink color, or a darker red color, whatever you prefer!

To decorate, add buttercream into piping bag and decorate cake to your heart’s content. I actually have a piping gun that I use instead of a bag, and it works quite well! If you’re interested in one too, I will link one similar to what I have below.
I just added some icing to the edge of the valentines cookie cake, and then topped it off with more sprinkles!
To store leftover cake, you could go ahead slice it all and place in an airtight container. Or cover the entire cake with plastic wrap, which is what I did. Cake will keep for about 3 days at room temperature.
